Apricot Muffins

Very yummy muffins. I used canned apricots and they turned out perfectly moist. I love the texture of these muffins and the cake part is very tasty...just the right sweetness.

Irresistible Double Chocolate Muffins

Love these! Will be keeping a supply of these in the freezer. Extremely picky toddler likes them and I don't feel bad letting him have these chocolate muffins for breakfast or snack because they're so healthful!

German Sweet Chocolate Cake I

Made this for my husband's aunt's birthday. This cake turned me into a german chocolate cake fan. The icing is to die for!! I had to cook the icing significantly longer than specified, but it was worth it!

Banana Chip Muffins I

Love these! I used a little over 1/4 cup whole wheat pastry flour. Think I'll maybe do 1/2 all purpose, 1/2 wpf next time. I expected them to be dense because the batter was so thick, but they puffed up so nicely and looked beautiful. Perfect consistency for a muffin. I used 1/2 cup mini chocolate chips. May try to sub applesauce for oil next time for lower fat. I liked these better cool than warm.

I used garbanzo beans instead of green beans and a 28 oz can tomato sauce plus 1 can diced roasted tomatoes w/garlic. Very hearty and delicious. Better the next day!

Peanut Butter Clusters

I'm giving 5 stars because these tasted great, but for some reason, my peanut butter chips wouldn't melt. They just got dry and soft, like they had been overcooked, but I checked it often in the microwave. Oh well. I added milk and put them in the freezer to harden. Will try again!

Love these things! Only change I made was to use provolone cheese, and add some minced dried onions to the top. They didn't make that big of a difference, so I'd probably stick with sesame seeds only next time.

Garlic Salmon

Turned out great! I sprinkled dry dill over garlic and placed lemon slices on top. Didn't have green onions, but I sliced some white onion and put in the foil. Turned out very moist and flavorful!

Easy BBQ Bake

I used boneless chicken breasts and original Bulls Eye BBQ Sauce. Turned out great! Really liked the onions. Leftover chicken in sauce was great cut up for a sandwich the next day. It does make a lot of sauce, so you could do probably 6 chicken breasts.

Banana Peanut Butter Bread

Very moist and great with some crunchy peanut butter spread on before you eat it! I also decreased flour to 1 3/4 cup, increased peanut butter to 3/4 cup, and used 3/4 cup semi sweet chocolate chips instead of walnuts. Baked for 70 minutes and it came out perfect. Covered w/foil after 50 minutes to prevent burning.

So good! Perfect for potlucks. I used 1 stick of butter and Kettle Cooked Creamy Mediteranian Herb chips that I had on hand. Turned out great! So quick and easy to prepare!

Burrito Pie

Good recipe for a potluck. I would recommend using fresh corn tortillas that you can get for $2/lb at a Mexican grocery store if possible, and really layer it up. I used salsa in place of the taco sauce. Corn would also be a nice addition. I only used 1 lb. ground beef, and added homemade taco seasoning.
