Jen's Mini Ham and Cheese Rolls

Love these things! Only change I made was to use provolone cheese, and add some minced dried onions to the top. They didn't make that big of a difference, so I'd probably stick with sesame seeds only next time.

Veggie Pizza

Was a hit even with our veggie-picky family. I made it the same, except only used broccoli, red pepper, and shredded carrot on top. Didn't use all the sauce, but saved it and put dollops on mexican omelletes later in the week. So tasty!

Best Spinach Dip Ever

Only spinach dip I'll ever make. Even my extremely picky 2-year old liked it! I used Onion Soup mix instead of Leek, left out the water chestnuts, and served it with multigrain tortilla chips.

Irresistible Double Chocolate Muffins

Love these! Will be keeping a supply of these in the freezer. Extremely picky toddler likes them and I don't feel bad letting him have these chocolate muffins for breakfast or snack because they're so healthful!

Banana Chip Muffins I

Love these! I used a little over 1/4 cup whole wheat pastry flour. Think I'll maybe do 1/2 all purpose, 1/2 wpf next time. I expected them to be dense because the batter was so thick, but they puffed up so nicely and looked beautiful. Perfect consistency for a muffin. I used 1/2 cup mini chocolate chips. May try to sub applesauce for oil next time for lower fat. I liked these better cool than warm.

I used garbanzo beans instead of green beans and a 28 oz can tomato sauce plus 1 can diced roasted tomatoes w/garlic. Very hearty and delicious. Better the next day!

Garlic Salmon

Turned out great! I sprinkled dry dill over garlic and placed lemon slices on top. Didn't have green onions, but I sliced some white onion and put in the foil. Turned out very moist and flavorful!

Easy BBQ Bake

I used boneless chicken breasts and original Bulls Eye BBQ Sauce. Turned out great! Really liked the onions. Leftover chicken in sauce was great cut up for a sandwich the next day. It does make a lot of sauce, so you could do probably 6 chicken breasts.

German Sweet Chocolate Cake I

Made this for my husband's aunt's birthday. This cake turned me into a german chocolate cake fan. The icing is to die for!! I had to cook the icing significantly longer than specified, but it was worth it!

Yummy Tater Tot Casserole

So good! Perfect for potlucks. I used 1 stick of butter and Kettle Cooked Creamy Mediteranian Herb chips that I had on hand. Turned out great! So quick and easy to prepare!

Burrito Pie

Good recipe for a potluck. I would recommend using fresh corn tortillas that you can get for $2/lb at a Mexican grocery store if possible, and really layer it up. I used salsa in place of the taco sauce. Corn would also be a nice addition. I only used 1 lb. ground beef, and added homemade taco seasoning.

Nutty Pecan Waffles

Light and delicious! Normally I wouldn't want the extra step of beating egg whites to stiff peaks, but it is totally worth it! I substituted 1 cup whole wheat flour, and used 1/2 cup melted coconut oil in place of vegetable oil. Made my own buttermilk by adding 2 tbsp. vinegar to the milk. These turned out great and made about 10 round waffles.

Simple Whole Wheat Bread

Turned out great! Very tasty warm with butter and honey! Good neutral flavor...not sweet and not too whole wheaty tasting. Feel good feeding it to my family because it doesn't have perservatives. Put two loaves in freezer.

Maria's Stuffed Chicken Breasts

Turned out so moist and flavorful. I only used 1 egg and pounded the chicken breasts flat and then rolled up with cheese mixture. This will be a special treat of a meal for our family!
