Chicken Breasts with Lime Sauce

I thought this was delicious! I took the advice of other reviewers (that's why I LOVE Allrecipes!) and cut the butter in half, and added a little honey. Others mentioned the lime juice evaporating - I opted to melt the butter in the pan first, then add the juice and spices. Loved it!

Traditional Creamy Coleslaw

I loved the zip that this dressing has! A traditional, creamy coleslaw with a kick. Unfortunately, I wasn't paying attention to the ounces on my coleslaw mix (only 16 oz) so it was a bit heavy on the dressing, but otherwise fantastic. I will definitely be making this again.

Easy Pineapple Cake

I read many of the reviews before making this cake, and decided to give it a try. While it wasn't bad, we all felt that it was missing just a little 'something'. I loved the ease of making it, and the fact that it was fat free. Perhaps next time I will add a little cinnamon and some salt. I didn't mind that it was dense and moist, and while I did use canned cream cheese frosting, I suspect that it might be even better with just a dusting of powdered sugar.

Bread Pudding I

I made this for my son-in-law, who is constantly on the lookout for the perfect bread pudding. He took one bite and happily proclaimed that "this is it!" I followed the recipe as written except I took the shortcut of using cinnamon raisin bread (the entire loaf), and cooking for an additional 10 minutes since the middle wasn't quite done after 35 minutes. Delicious!

Pecan Pie V

I made this for Thanksgiving, even though I generally don't try out new, untested recipes for company. It was a huge hit, even with my husband who typically doesn't like pecan pie because it's too sweet. This will be my new, go-to recipe from now on. Like some other reviewers mentioned, I left out the white sugar, and used dark brown sugar for the rest. Fabulous!

Aunt Ro's Baked Beans

I made these for a potluck and got rave reviews. One of my favorite features of Allrecipes is being able to read what others have tried and how it worked for them, which gives me the confidence to stray away from the recipe if I'm missing an ingredient, or if it has one I don't care for. In this case, I too used Sweet Baby Ray's BBQ sauce, added a bit of mustard, and used kidney beans, garbanzos, great northern, canned limas, and I only had one can of baked beans. It was still delicious...it's really the sauce that makes it, so you can vary the beans any way you want. Prep was quick and easy - this will be my go-to potluck recipe from now on!

Easy Quiche

This was a delicious and super easy dish! I had some deli ham I needed to use up, and I used a bag of parmesan/mozarella instead of just plain parmesan. I loved the convenience of the one bowl prep - a great way to use up any leftover veggies as well. This could easily be turned into a breakfast/brunch dish as well.

Zucchini Brownies

I had a HUGE zucchini given to me so decided to try these brownies...they were decadent, moist, very dense and chocolatey. Did not change anything except to add another large handful of shredded zucchini and omit the nuts for my hubby. Did not frost them, as everyone was eating them before they could cool enough to frost!

Cranberry Walnut Bread

This was a great recipe! I love cranberry-nut bread and have tried several versions over the years, but this is hands down the best. I have to comment on the cooking time however...I was skeptical when I saw the 30 to 35 minutes since I've never cooked a quick bread for that short a time before. I left it in for an extra 10 minutes, and the middle was still very gooey. Possibly a typo? I made a "note to self" to increase it to 50 to 55 the next time I make it, which I definitely will. My husband loved it as well.
