Slow Cooker Thai Peanut Pork

Reviewed: Sep. 23, 2010
Yumm! Great crock-pot recipe. This should be shredded pork, not sure why most of the pictures are of the pork still intact. Followed the recipe exactly excepted used bone-in chops. Served with Coconut-Lime rice . Good stuff!

Dill Vinaigrette

Reviewed: Feb. 15, 2010
Great easy dressing! Followed the recipe exactly, except I used fresh dill that I've been wanting to use up. FYI - if using fresh, use more since dried has a stronger flavor! I probably used about 2 teaspoons, and mixed it all up in the magic bullet. Fresh and delicious!

Feta Cheese and Bacon Stuffed Breasts

Reviewed: Jan. 22, 2007
This was an amazing dish... and it was so easy and quick! The only changes I made to the sauce was I added more lemon, and also some red pepper flakes to kick it up a little. This sauce would be great as a dressing for anything as well! Thanks!

Artichoke Chicken

Reviewed: Nov. 14, 2006
This was great! I used Mozz chesse instead of Parm Cheese because I don't like Parm. I also added about 4 cloves of garlic because we love garlic! I seasoned the chicken breasts with some of my favorite seasonings before adding the topping! It turned out great! Yum!

Great Pumpkin Dessert

Reviewed: Nov. 1, 2006
This was amazing! A big hit for all pumpkin lovers.... and very easy as well! I used pecans instead of walnuts because I like them better. Next time I might use a little less butter (maybe 1/2 cup-1stick), just seemed like I had alot on top..... but everything about this dessert was delicious! Everyone really enjoyed the layers.... bottom being like pumpkin pie, and top being crunchy crumbled cake! Yum!

Apple Bacon Tomato Soup

Reviewed: Oct. 18, 2006
This reminded me much of a vegetable soup, but it was still delicious! The apple is a very interesting add in. A great lunch or winter evening meal! I didnt have any red wine on hand, so I added white cooking wine and it still turned out great! Thanks!

Avocado Salad

Reviewed: Oct. 18, 2006
Wow the picture looked just like mine! This is wonderful, almost like a very chunky guacamole. I used red onion, and omitted the bell pepper and cilantro. This is really delicious all you avocado lovers!

Macadamia-Crusted Sea Bass with Mango Cream Sauce

Reviewed: Oct. 18, 2006
I changed this around a little, but I still wanted to comment on how great it was! I coudlnt find macadamia's at my grocer, so I used sliced almonds. For the mango cream sauce, I started heating and stirring it, but I couldnt get to the right consistency so I threw it in my magic bullet and the texture was much better. I added a little salt to the sauce to cut down the sweetness. It came out great.... my fiance loved it! Thanks!

Chicken and Summer Squash

Reviewed: Oct. 18, 2006
This is a really simple and delicious meal! I omitted the butter and vegetable oil and just used olive oil instead. Instead of the tomato, I substituted with a can of diced tomatoes. I cut the chicken into strips and then sauted with seasonings, and then added the canned tomatoes and squash/zucc and sauted all together. This was really yummy! I've made it a few times already!

Feta Chicken Salad

Reviewed: Oct. 18, 2006
This is an awesome chicken salad, my fiance requests it for his lunch regularly! I excluded the bell pepper because we dont care for them much, and for the chicken I just bought the already prepared and chopped chicken pieces near the cold cuts at the grocery store. I added some garlic salt as well. Athena makes a really good garlic & herbs feta cheese that I used. This is really yummy!

Rockfish with Crab and Old Bay Cream Sauce

Reviewed: Oct. 18, 2006
This is a great recipe! I've made it several times, but I have to admit that I change things around everytime as well according to what I have on hand at the house. I live in South Florida so rockfish really isn't our fresh fish of choice, most times I use Dolphin or Yellow Tail. Instead of crabmeat I've used chopped up shrimp as well. I always add a couple popular southern seasonings that we enjoy.... but everything it's been delicious!

Italian Green Bean Chicken

Reviewed: Oct. 18, 2006
I adore this recipe for 3 reasons.... quick, healthly, and YUMMY! I add a few of my favorite seasonings to spice it up, but everything else I keep the same usually. I cook this atleast once a month! I serve over white rice, and my fiance loves it, he even takes the leftovers for lunch the next day!

Roasted Garlic Peppercorn Sauce

Reviewed: Jun. 3, 2006
Got many compliments on this sauce. The only thing I didn't use was the nutmeg because I didnt have any on hand. I also added a little spicy seasoning to give it a kick! It was delicious! I used it as a meat topping sauce to top some deer back strap.... yum!
