Salmon and Rice Balls

I used the recipe as is first, and it was fine but I wanted more veg into it, so I added the carrots and a few other veg (onion, green pepper, celery) and also some parley. I used fresh, halved button mushrooms tossed around the salmon cakes before covering with the soup. Since I'm doing the Weight Watchers thing, it bulked up each salmon cake so the portions were lower points, which means I could eat more! LOL But it's a great basic recipe and not fried!

Scallops Florentine

This was grand-- I used half as much parmigiana, and regular skim milk instead of evaporated. I only had bay scallops instead of sea scallops. But it was essentially the same recipe. It's quite low fat, which was why I chose it. So it's tasty, healthy, and fairly inexpensive. Definitely a 5 star meal for this Irish coleen.

Bolognese with Homemade Noodles

ok, I'll try this tonight, but without the flax seed meal. I haven't access to that, so I wonder if that's needed for the noodles. I suppose I'll find out. This recipe does look easy.

Baked Pasta Shells & Sausage

Zucchini & Herb Risotto

We absolutely loved this. It works as a side for 4-6 people or as a main for 2-3 people. Not as difficult as I thought it would be.

Beaker's Vegetable Barley Soup

This is an absolute favourite for John, and when our Shona comes in on a Monday for cooking we get it the first Monday of the month and she puts a lot into the freezer. It's supper delicious.

Buttermilk Pancakes I

I made this when we had guests for lunch, with syrupy strawberries on the side. Some pancakes had a handful of blueberries cooked into them. And squeezable golden syrup for those who preferred their stack with less imagination. It was a treat for everyone.
