Chef John's Chicken Riggies

Reviewed: Nov. 20, 2012
This has been Chef John's recipes at our house this week and I haven't had one fail me yet and this one was outstanding. I usually like sauce to be sitting on my pasta and this sauce was thin but omg, the flavor was unbelievable!! I had to leave out the kalamata olives because I had none, but followed the recipe exactly.

Slow Cooker Beef Pot Roast

Reviewed: Nov. 19, 2012
I used 2 chuck roasts around 2 1/2 lbs. each. Followed all the directions expect for the slow cooker, I didn't think I had enough time to use the slow cooker. Cooked it in the oven at 275 degrees for about 4 hours. Absolutely delicious and I had leftover Chef John's mac and cheese. Perfect dinner on a cold night.

Marinated Baked Pork Chops

Reviewed: Nov. 15, 2012
I had 8 pork loin chops and I tripled the ingredients including 2 cloves of garlic and marinated them for a couple of hours with half of the sauce. I baked them covered for 15 minutes, turned them over and added the remaining sauce and left them uncovered for 10 minutes, then broiled them for 5 minutes to give the sauce a nice glaze. Also, I cut a medium size onion in quarters and baked them as well. The taste was so flavorful and everyone loved them.

White Chili with Ground Turkey

Reviewed: Nov. 15, 2012
wow this was really good, I did use 1 lb. ground turkey and 1 can of green chile peppers, 1/2 tsp. cinnamon and 3 cups of broth. We like our chili a little on the thick side so I used some flour and mixed it in some broth and then added it in to thicken it up.

Stuffed Cabbage Rolls

Reviewed: Oct. 16, 2012
This recipe was pretty good, I added garlic powder and worcestershire sauce to the meat. Layered the dish with cabbage and then placed the stuffed cabbage on top and repeated another layer of cabbage. I used 2 cans of tomato soup and 1 can of tomato sauce. Hubby said next time we have to add more flavor to the meat.

Slow Cooker Ham

Reviewed: Oct. 15, 2012
I was a little nervous about the amount of cook time, since I had a 5 lb. smoked butt ham and I read many reviews and came up with a 4 hr. cook time and the ham came out very moist. I did use 1 cup of brown sugar on the bottom, pineapple rings on top of the ham with the juice and 1/2 cup brown sugar mixed with 1/2 cup of orange juice and poured over the ham. I removed some of the juice and put it in a pot and added cornstarch to thicken it up and then basted over the ham. I was so surprised on how good it turned out. I will make ham again this way for sure. Update 12/29/12, made this for Christmas, used a 7lb. butt ham and cooked for 4 hrs. it was so moist everyone loved it. I'll only use this way to cook a ham and the flavor was outstanding!!

Chef John's Banana Bread

Reviewed: Sep. 28, 2012
I'm not a banana person but this bread was delish! Of course my hubby is not a chocolate person and he would prefer not having the chocolate chips, but he was over ruled by everyone in the house! This bread flew over the plate.

Sweet Potato Bread I

Wonderful bread! I used half white and brown sugar, apple sauce instead of the oil and wheat flour instead of the all-purpose flour. I will make this bread over and over. Thanks for sharing.

Paul's Pumpkin Bars

Reviewed: Sep. 28, 2012
I used some ideas from other reviewers, 3 eggs, 1/2 cup applesauce and 1/2 canola oil, wheat flour, pumpkin spice and a large can of pumpkin. These bars came out very dense and looked under cooked but it was soo moist with the extra pumpkin added. Next time, I'm gonna the 15oz. can and see the difference. They lasted 1 day in my house, guess they loved them!!

Chef John's Homemade Chicken Noodle Soup

Very tasty, not much of a thyme lover, so i substituted a little bit of poultry seasoning in its place. I also used a small whole chicken to make the broth and used the meat to add to the soup.

Chef John's Macaroni and Cheese

Reviewed: Aug. 18, 2012
Chef John, this recipe rocks!!! I did decrease to 12oz. of macaroni and glad I did, hubby loved it!! I did a little less than 1/4tsp. of thyme because I did not want to overpower the taste as others have stated, but boy this was soo good. I used skim milk because it was what I had and those panko crumbs are a must!!!
