Butterscotch Bread Pudding

Oh YES! This is heavenly. Added a cup of golden raisins, but would have been great without I am sure. Also added one more egg as I like a stiff bread pudding. Think chopped nuts would be a great addition too.

Greek Shrimp Dish From Santorini

Loved this, just loved it. I think you could substitute less expensive meats to make a less pricey dish, probably even tofu for vegetarians, but definitely, make it with the shrimp sometime!

Glazed Dijon Carrots

My bunch are not cooked carrot eaters. Both my daughter and her husband said they have NEVER eaten cooked carrots that they liked, but this dish was a keeper. I was also baking a ham, so I substituted the maraschino cherry juice for part of the water, and threw in about 6 of the maraschino cherries. They were a very nice addition.

Broccoli with Garlic Butter and Cashews

I made this with Christmas dinner and everyone raved about it! I did use frozen broccoli and just microwaved it. As suggested by some, I sauted the garlic (3 cloves, we like garlic a lot) in the butter and then added the remainder of the ingredients. I kept all the other ingredients in the same amounts, except for doubling the cashews because we all love nuts too! It really was excellent.

Easy Quiche

Made this for Christmas Eve since my vegetarian daughter was going to be here. I would say this is pretty adaptable, basic recipe. I did saute and add one onion and three cloves of garlic. I don't own any quiche pans, but one recipe of this made enough to bake in a 9 X 13 pan. Everyone liked it, including my picky eater son-in-law

Chocolate Trifle

Need to rename this "A diabetic coma waiting to happen! *LOL* As with others I "trifled" with this recipe. (Do you think that is where the term originated?) I did make my own whipped cream to mix with the pudding as suggested, drizzled the brownie layer with caramel topping, and layered Heath toffee bits between the chocolate and white cream layer. I did intend to buy the French vanila whipped topping, but my store didn't carry it. So here is my own twist on this recipe! I added praline liqueur to the Cool Whip and beat it. Oh my, it was PERFECT with the caramel and toffee. To a 16 oz container I only added 6 "bottle cap" fulls, so no one is going to leave in a stupor as a result of the alcohol. Cool Whip never tasted so good!
