Sausage and Egg Casserole

Reviewed: Aug. 15, 2011
I made this for dinner but i added ham and some leftover pork from dinner last night. I thought it was good but I think the sausage is the way to go. It was a bit bland with my meats....I will def try this again with the sausage and adding finely chopped peppers and onions like suggested in other reviews.

World's Best Lasagna

Reviewed: Mar. 21, 2011
Perfect! I the only thing I changed was I used jarred sauce that I put into pan after cooking sausage. Then I added some more oregano, garlic, and basil, then simmered for 20 minutes. All 5 of us left satisfied!

Slow Cooker BBQ Pork Chops

Reviewed: Jan. 20, 2011
This was exactly what it sounds like. It was good but can be a bit dry even with the BBQ sauce. I would recc using a 'fatty' pork chop not a center cut, lean one. In addition, use a BBQ sauce that you REALLY like because the cooking method only intensifies the flavor.

This was THE BEST!! I added some capers and very thinly sliced red onion on top. Didn't change a thing!

Dessertlover's Classic Caramel Sauce

Reviewed: Jun. 16, 2010
Taste was very good but something went wrong on the first step. The caramel never browned and then after about 16 minutes, it crystalized. After another 3-4 minutes, I gave up browning and put in the cream. **NOTE: just did some research online and if the sugar seizes up and gets hard (in step one), simply turn up the heat and allow the sugar to melt. As it does, it should take on a beautiful caramel color.

Corn and Zucchini Melody

Everything's better with bacon and this is definitely true here. The bacon makes this dish...I added 2 cloves of garlic and a little salt and omitted the cheese. I liked it!

Linguine With Clam Sauce

Reviewed: Apr. 7, 2010
I loved this. I used one extra can of clams and more garlic and dried herbs than it called for ( 1 T parsley and 1 t basil ) and it was great. Certainly can cut back on the oil without any change of flavor if youo desire. Great and simple recipe!!!! Try it!

Plato's Dry Rub

Reviewed: Feb. 22, 2010
I REALLY liked this rub--it is quick for when you don't quited know what to do with your chicken but are short on time. I used it on a package of drumsticks and scaled the recipe back to 8 servings. I didn't have the lemon pepper so I used a regular pepper blend and used reg. herbs instead of ground herbs. But the taste was really nice. I liked the sweetness that the sugar gave it. It is a KEEPER for me.

Whole Wheat Banana Nut Bread

Reviewed: Feb. 8, 2010
This was so dense and I even added a little extra banana. I guess part of it is I don't really like using whole wheat flour but this was a lead brick. It didn't seem to rise at all! I must have done something wrong but I recheck recipe and I did everything exactly. Huh?! :(

Marshmallow Delights

Reviewed: Oct. 23, 2009
These were good but not what I expected. They definitely remind me of a cinnamon roll vs. tasting like marshmallow. My 5 yr old made these with me and had fun. Problem~ all of them oozed out and a couple seemed like they were sealed properly but actually exploded.

Dad's Steak Rub

Reviewed: Oct. 21, 2009
My hubby loved this steak (my young kids said it was "spicy"). I didn't have real maple syrup so I did use the 'fake' kind with a little added honey and cooked it on a grill pan. It came out delicious. My hubby said it was the best steak I've cooked! Thanks!!

Really tasty with the following modifications: used 2 large cloves garlic, less pasta, sun-dried toms in oil vs dry, and chicken stock (from bouillon). This was very flavorful and light.

Unbelievably Awesome Barbeque Chicken Pizza

This was TERRIFIC! I had a baked chicken breast left over and just tossed it with BBQ sauce. I used a little extra BBQ sauce than it called for when I mixed it with marinara sauce b/c we like it stronger but REALLY great!!!!!

I gave it 5 stars b/c my hubby said it was the BEST mac and cheese he's ever had! I followed the recipe except I added one extra garlic glove, used dijon mustard, and topped it with buttered panko crumbs mixed w/ garlic powder and parsley. Crunchy on the top and cheesy underneath!! yummy!

Cheesecake Cookie Cups

Reviewed: Jan. 1, 2009
I love cheesecake...these just didn't do it for me. The choc. chip cookie on the bottom seemed to overpower the subtle flavor of these cheesecakes. I think maybe the gingersnaps on the bottom might be better. They ARE h/e quick and easy.

Lobster Tails Steamed in Beer

Reviewed: Oct. 24, 2008
This is absolutely the easiest way to cook a tasty lobster. I added 3-4 minced garlic cloves to the beer and steamed them for about 9 and a half minutes. Watch them though...the key is to NOT overcook them. Remember, they'll cook a tad more after you remove them from the steamer before you can even get them out of the shell. I have done them twice and 9 minutes is perfect.
