Chef John's Chicken Riggies
So the first time I made this, I messed up and added 1 lb of italian sausage. Whoops! My daughter loved it, but I was more of a so-so. But realizing my mistake, I wanted to make it again correctly. I use mild sausage because I'm the only one who likes hot stuff, and sausage doesn't agree with me usually. I love this with the sweet cherry peppers! I still did not care for the sausage but my hubby and daughter gave it 2 thumbs up! I would definitely make this again, but I'm not sure if I will omit the sausage or not.

Chef John's Swedish Meatballs
If you are used to only beef meatballs, you can just use all beef. The texture seems odd to me but it was still good. It will just take getting used to having pork/beef meatballs. They taste great; I'm just used to all beef meatballs. However, the sauce is divine! I grew up on using the McCormick Swedish Meatball seasoning, and I have been trying to find a recipe to emulate it. This is so much better! Even the seasoning on the meatballs is better! Chicken Enchilada Slow Cooker Soup
My daughter and I have made this a few times over the past year. My hubby had it for the first time in January. He is not much of a soup person, but he went back for 2nds! The only thing for the last time is I left it in the slow cooker a little longer and the liquid reduced a bit more than intended so I had more of a stew than a soup. But it was still fabulous!
