Country Fried B.L.T. with Fresh Herb Aioli

This was just incredible! I made each sandwich by microwaving a tortilla, covered with very small sprinkling of shredded cheese, for about 30 seconds. Then I spread a fine smear of the aioli over the melted cheese, topped it with romaine lettuce and slivered tomatoes and used about 2 pieces of the fried bacon (brought a tear to my husband's eye when he saw me frying it!!!) and rolled each one up. PERFECT!

Saltine Toffee Cookies

There is nothing about these that doesn't satisfy. I've also done several of the reviewers' recommendations. This last batch, I cracked up some Dove Milk Chocolate and used that along with the chips. YUM!

Czech Roast Pork

Made this tonight and it was a HUGE hit with family and guests. Followed the recipe pretty closely, but added a little more garlic seasoning and onion powder to the paste. I used a picnic shoulder. Gravy-hating hubby LOVED the gravy, especially since I added all the onion chunks to it.

Beer and Brown Sugar Steak Marinade

A big hit. I subbed Ponzu sauce for the teriyaki (what I had on hand) and used a brown sugar/splenda mix (stick with brown sugar, this made it a bit too sweet) and about a tablespoon of Montreal Steak seasoning. I marinated steak tips for kabobs and also marinated the veggies. Everyone loved it!

African Chicken Stew

I added a large handful of baby spinach, also celery, carrots and parsnips since I am avoiding potatoes. Next time I will use more of them because the parsnips were a nice rare bite in the stew. (I only used one carrot, one parsnip and 2 celery stalks.) I wanted to try something to "brighten" it up...oddly enough, a few packets of Taco Bell Fire sauce added some nice oomph to it.

Spanish Rice Bake

This was a great quick recipe for me, since I used leftover cooked brown rice (and omitted the water). I used a can of rotel tomatoes and added leftover tomato paste instead of using chili sauce and subbed coconut sugar for the brown sugar. I also added quite a bit more cumin, at least twice as much, because I love it.

Easy Garlic Broiled Chicken

So simple to prepare and execute with basic ingredients that nearly everyone has on hand. I broiled it as specified and it was done fast and browned very nicely. I used skin-on, bone-in thighs and it took roughly 20 minutes to broil.

Cream of Asparagus Soup I

A big hit here. I used all chicken broth (no water) and 2 cubes of bouillion and a package of onion soup, since I didn't have the condensed chicken broth. I skipped the soy sauce and it was salty enough for my saltoholic husband. Probably a little too salty for the average person, but it had a great flavor.
