Meatball Nirvana

I've been meaning to try these for a while now and finally did last night. These were really good and flavorful! The only changes I made were that I used ground turkey instead of beef, I used onion powder instead of fresh just out of pure laziness, and I omitted the spicy ingredients because I'm a wimp. Made myself a meatball sandwich and my boys had spaghetti and meatballs...yum!

Bananas 'N' Cream Bundt Cake

I really liked this, but it doesn't really have a cake texture, it's just a really awesome banana bread. I topped it with some whipped cream, chocolate syrup, and strawberries to make it more dessert like. I actually liked it a lot better plain. Like I said, awesome banana bread.

Tiramisu II

I made this to take to dinner at my parents request. It turned out fantastic. The only change I made was that I omitted the rum and doubled the coffee and I made my own ladyfingers (recipe on this site) It turned out great and everyone loved it...this will be my go to tiramisu recipe :)

Summery Lime-Mango Shortcakes

These were very good! I had a mango that I needed to use and I've had my eye on these, so I went ahead and made them :) I did have to make one significant modification and that was that I did not have a lime (or a lemon even) so I had to do without. These were still great, but I could see how the lime would make them even better. Like others, I did not use the gelatin in the whipped cream and it turned out great. I really loved the coconut flavor in this. As for the shortcakes, I used butter instead of shortening and I did not have poppy seeds, but those were the only changes I made. They turned out fantastic. Loved this! I will definitely be making these again with the lime!!

Marshmallow Chocolate Chip Pie

My in laws were visiting and my father in law mentioned this pie and how it was a secret family recipe. So of course, I looked and found it on here and made it for him :) He was very happy and said that it tasted exactly the same as when his sister makes it. It was super easy to make too!

Kalua Pig in a Slow Cooker

This was fantastic!!! So simple too! It was just a tad salty, but I couldn't find hawaiian salt and just used kosher so I don't know if that has anything to do with it. Still a great recipe though!

Simple Sweet and Spicy Chicken Wraps

I really enjoyed this a lot and it was simple to make. I made it as is, other than only using half of the cayenne called for. It turned out having the perfect amount of spice for me. I will definiltely be making this again and have added it to my "favorites" folder :)

Chocolate Chip Pie I

I thought this was great! Like a big gooey chocolate chip cookie. I just made it in the pie plate without a crust. I also reduced the butter to 3/4 cup and added 1/2 teaspoon salt. Perfect! :)

No Time to Cook Chicken

I made this due to necessity, the lady I work for (watching her kids) is in seriously need of a trip to the grocery store, but pretty much had everything to make this. For me, this was just ok as I'm not a fan of condensed soups, but, the kids loved it! My son had seconds and that rarely happens. I did make a couple of changes...used cream of chicken for both of the soups, added a packet of turkey gravy mix, and added some frozen peas in when I mixed in the sour cream. Like I said, the kids devoured it!

Vegetarian Korma

This was good! I have not had Indian food that much at all so I didn't know if I'd like it or not, but I did :) The only changes I made were that I halved it, I didn't have any bell pepper so I just used some extra potato, and I used coconut milk instead of cream. I served it with some garlic tandoori naan and I enjoyed it :)

Apple-Curry Tuna Melts

These were good. I did make a couple of changes...I had 5 oz cans of tuna and 1 can didn't seem like enough so I used 2 cans, based on some other reviews I halved the curry powder, and I used cashews instead of walnuts, because that's what I had. It turned out very nice. The 3 star rating is because with just 1 can of tuna this would have been a mess of too much everything else.

Grandma's Lemon Meringue Pie

This turned out really well. This was the first time that I've ever made (or eaten, actually) lemon meringue pie. I loved it :) The only change I made was that I used meyer lemon's in place of regular lemons. I didn't have any problems and it tasted fantastic. Will make again :)

White Almond Wedding Cake

I had such high hopes for this since it has such rave reviews, but I just didn't like the taste. I don't know what it was, it tasted really artificial to me for some reason? I don't think it was the food coloring I used because it just tasted very cake mix-y (not that I don't like cake mix) I just don't know how to explain it...anyway, I used this to make cupcakes for my son's class for his birthday. I frosted them with chocolate frosting and all the kids seemed to like them anyway :)

Spinach and Feta Pita Bake

Oh how I loved this! It was easy and pretty quick to make and so so good! I didn't use the sun dried tomato pesto, just used regular basil pesto because thats what I had and I din't use the pepper because I hate it. I will be making this again for sure :)

This was really good! And very easy too! I made this as written except that I used a pre made graham cracker crust and I added 2 tablespoons of sugar to the cream. Super yum! I could not get a good looking slice out for the life of me, but it still tasted fantastic :)

Poor Man's Sandwich

I saw this a while ago and have been wanting to try it. So tonight, I decided I HAD to have it LOL It was ok...not bad, not great or anything...kind of weird. Probably wont make it again, but glad I tried it. Although, I might make it again if I'm ever pregnant again :)
