Southern as You Can Get Collard Greens

Reviewed: Oct. 24, 2011
I got some collars and turnip greens in my csa. box th8s weekend and had no idea what to do with them since I have never eaten or cooked them before. so I decided on this recipe and they were delicious!!! I did use a little less than half just regular verge broth and the rest water for the liquid because I was worried about it being too salty. I also added just a bit of honey like others suggested. I ate them with cornered and sime caramelized onions. So good!!!!

Chicken and Onions Over Linguini

Reviewed: Aug. 11, 2011
I just made this for dinner and I really, really enjoyed it. Such a nice simple recipe. I did make 2 minor changes, I did not use the green onion because I didn't have any, and I just used some Italian seasoning in place of the fresh thyme. Delicious!

This is DELICIOUS!!! I made it exactly, except for using homemade white bread instead of the french bread. Really an easy recipe for how awesome it is :) Thanks for a great recipe!!!

Mexican Bean Salad

Reviewed: Jul. 17, 2011
This was tasty! A nice salad for a hot summer day. I halved the recipe and it still made quite a bit. The only changes I made were that I left out the cilantro because I didn't have any, left out the pepper because I hate it, and left out the hot pepper sauce because I don't like spicy. Thanks for a great recipe!! Went great with the tri tip I made :)

Homemade Refrigerator Pickles

Reviewed: Jul. 17, 2011
This was my first time making pickles and I think they turned out very well! The recipe is super easy too, which is great. I didn't have that many cucumbers, so I cut the recipe back a bit. I also cut the sugar by about 3/4 and it was perfect. I had to double the liquid because as is there just wasn't enough to cover. I also added a couple clove of garlic. I chopped some of these up and put them in my macaroni salad for dinner tonight :)

Canned Spiced Pickled Beets

Reviewed: Jul. 16, 2011
This is the first time I've ever made pickled beets and I thought these turned out wonderful :) The spices add a really nice warmth to the recipe and the beets are quite addictive! It's also an easy recipe and a great way to use up a bunch of beets! These would be so great in all kinds of things, like salads and such. So good! Thanks for the recipe!!

Slow Cooker Cheese Steaks

Reviewed: Jun. 28, 2011
I'm so glad I found this recipe because I bought a 3 pack of tri tips that was on sale and needed some new ways to make it!! This was really good! I didn't use the mushrooms, just because I didn't have any on hand. I love a good sandwich :) Thanks for the recipe!!

Lemon Nut Balls

Reviewed: Jun. 28, 2011
I really liked these!! I did use walnuts instead of pecans, but I think both would be fantastic. Other than that I kept everything the same. These are a great little refreshing treat for when its hot, especially since you don't have to use the oven at all. And they're so easy! They're reminiscent of lemon bars, which I love. They have a light lemon flavor though, so if you want that to be a little more intense I'd maybe add some lemon zest. The lemon/sugar mix might seem too wet, but don't be tempted to add more powdered sugar because after it's chilled, it's perfect :) I'll be making these again for sure! Thanks for the recipe!!

This was fantastic! I did use all butter instead of shortening just because i don't like using shortening. The cream really adds something great to this frosting...loved it!

Eclair Cake

Reviewed: May 4, 2011
This was just ok to me. I guess I was expecting it to be fantastic with all the great reviews. The great thing about it was that it was so fast to make and my kids really liked it. I whipped 1/2 cup of cream and used that instead of the cool whip. I also used homemade frosting instead of the store bought.

Jellybean Bark

Reviewed: Apr. 24, 2011
I think this is such a great idea! Fast and easy! I made this to go in my boys' easter baskets and they really loved it. I used sour jelly beans to kind of balance out the super sweet white chocolate. I really liked this too and I'm not a huge white chocolate fan. I think I might have spread my white chocolate too thin though because a lot of the jellybeans popped out.

Peanut Butter Easter Eggs

Reviewed: Apr. 24, 2011
I made these to put in my boys' easter baskets and they turned out great! I used chunky peanut butter because that's what I had. I think these were pretty sweet, so I might try to use less sugar next time.

Princess Jenna's Meatballs

Reviewed: Mar. 1, 2011
Soooooooo GOOD!!! I was craving some meatballs and came across this recipe that I've had in my recipe box for like forever. So glad I decided to use this recipe! I did make 2 minor changes...I used ground turkey instead of beef and I used about 3 teaspoons of dried minced onion instead of the 1/2 teaspoon of onion powder. For cooking method I baked them for 20 minutes, then simmered them in some sauce for about 10 mintes. Best meatballs ever :)

I've been meaning to try this FOREVER! Soooooo good and easy! I used one 14.5 oz can of fire roasted tomatoes with chilies instead of the 2 10 oz cans and I threw the chicken in frozen. Perfect!!!

Outside-The-Box Bacon Cheeseburger Skillet Meal

Reviewed: Sep. 7, 2010
So, I made this for dinner tonight. I made only a couple of changes...I only used 2 cans of tomato sauce and I use plain ol' yellow mustard instead of the dijon. I added some brown sugar as noted in the footnotes and I think next time I will add a little grill seasoning or season salt as well because I felt it could have used just a tad more flavor. My hubs really enjoyed this which is always a plus! I served it with some fresh corn on the cob and it made for a very satisfying dinner :)

This was fantastic! I made it exactly as written and I cooked mine in a 9x13 pan. Mine sunk in the middle a bit, so I don't know what that was about, but it still tasted awesome!! I frosted it with peanut butter frosting...yum :)
