Cool Cucumber Salsa

Reviewed: Sep. 16, 2014
I had a lot of cucumber to use up and wanted something to bring to a get together of moms. I made the recipe as listed w/o the dill (because I didn't have any) and with no jalapeno so it wasn't spicy. I then took half and added more garlic and a bit of jalapeno to it. It was a huge hit! I will be making it this weekend but with more jalapeno and garlic. We like it spicy! And the lime is a MUST. Don't skimp on the lime juice. It's what pulls it all together. {I may or may not have had this for breakfast this morning as well!}

Brown Rice and Black Bean Casserole

Reviewed: Oct. 24, 2011
This was good. I don't typically like casseroles, so it was nice to find something I would eat! I added a lot more rice (used 1 C dry) and more carrots (1 C shredded). I also used a bit of cayenne pepper instead of the green chiles (didn't have any on hand) and cheddar instead of swiss. I mixed part of the cheese into the casserole and the rest I put on top. I added a sprinkle of garlic powder as well. This will go onto our regular menu plans, I think!

Unbelievable Fish Batter

Reviewed: Jul. 20, 2009
Great flavor and lightness. I used it on fish and onion rings! Yum!! My problem wasn't the batter but my ability to deep fry!

Chicken Marsala

Reviewed: Dec. 22, 2008
I followed the suggestions made by other reviewers and doubled the sauce. I also added some garlic/onion powder to the flour. This turned out great. I added cornstartch and cream to the sauce afterwards to thicken up the sauce -- but I added too much. Still tasted good! Served it to family that was in town with angel hair pasta. It was a huge hit!

Amazing Butternut Squash

I made this for company, and they all RAVED about it. Asking for the recipe and all that good stuff. Definitely a yummy twist on regular squash!

Whole Wheat Pancakes

Reviewed: Sep. 13, 2008
These turned out EXCELLENT! I didn't have any wheat germ, so I substituted ground flax seed. I used 1/4 C canola oil instead of butter. Next time I might try applesauce. It did turn out a little runny, so I cut the milk to 2 cups and still had to up the flour another cup or so. Because of all the changed I had to make, I only gave the rating a 3, even though flavor wise it came out a 5! We topped with fresh strawberry syrup and whip cream for a delicious Saturday morning breakfast (with leftovers to freeze!)

My first try at sourdough starter. Turned out well. I've made a couple of loafs of bread and they've been great.
