Baked Tomatoes Oregano

These were really a great side dish. I didn't have fresh parsley so substituted fresh basil and also added a bit of shredded mazzarello on top. No leftovers.

Zesty Broccoli and Cauliflower Salad

I have made this basic salad for many years but have tweaked it for our family tastes. Instead of a Zesty Italian dressing I use a Balsamic vinegrette or a Red Wine vinegrette - not as harsh. I also marinate some fresh mushroom, grape tomatoes and black olives into the mix. Makes for a very colorful salad.

Savory Kale, Cannellini Bean, and Potato Soup

Wonderful Soup- Have made this for many years and has been a family favorite for our cold New England nights. I will occasionally throw in left over baked Kielbasa (chopped) or some crumbled browned italian sausage. Some great rustic bread and you got a great meal to warm you up on those cold winter days.

Sauteed Fiddleheads

Have been doing them this way for years, The key is par boiling them until just tender before sauteeing then you can do anything with them. My family loves them this way and if we happen to have some wild leeks( in our search for the fiddleheads - (here in the Northeast springtime)then by all means throw a few of them in as well. This dish definitely says "SPRINGTIME" for us here in New England and it is SOOOOO Good.

Crocked( Beer Braised) Pot Roast

Excellent flavor and easy. A real keeper. Leftovers are also great made into a stew. Just cut up meat and vegies into stew size and mix with gravy thined out with beef broth. Top with dumplings or serve with cheddar bisquits. Two meals. Yum

Egg in a Boat

MMM! - my daughter learned this one years ago at Girl Scouts. They called it "Eggs in a Frame" Only difference was they added egg immediately and turned all for over easy. Fun recipe
