Crunchy Romaine Toss

This is so good, I would give it more stars if I could! I have made it several times. I use a bag of precut romaine hearts and substitute red bell pepper cause we don't like raw broccoli... I also double the noodles and saute them along with the walnuts in the butter (to which I add the seasoning packets). Definitely wait until right before serving before adding the dressing and the noodles. It is delish!!!

Baked Beef Stew

Zucchini Egg Bake

I first found this in Simple and Delicious and have made it several times. Try adding some cubed ham to it if you want to have some meat in it. Everyone in my house really enjoys it (adults, teenagers and young kids!!).

Shoepeg Corn Casserole

I've been using this recipe for years. We LOVE it!!! I usually use 3 cans of shoepeg corn, but sometimes I use two regular sized cans of yellow corn. I also use a sharper cheese and crushed Cheezit crackers. It's very easy to make and really yummy!!

Copycat Panera® Broccoli Cheddar Soup

Three stars because it actually tasted good, but the whole cooking process was just strange. In all my years of cooking, I have never seen instructions like that. All you really gotta do is brown your butter, add the other veggies along with the broth, simmer til the vegetables are done. Then add your thickener - in this case, flour and melted butter. Then you add the milk and the cheese. It turned out great this way, and only took me and my daughter about a half hour to make it. Simmering the already thickened broth/milk for 20 minutes? Then adding the vegetables and cooking them for another 20 minutes? Seems to me that the recipe instructions are actually written in reverse!

Linguine with Asparagus, Bacon, and Arugula

This was delicious!! I had to use baby spinach because I couldn't find arugula at the store (I will look harder next time!). I hate to fry bacon so I cooked it in the oven for the 1st time and it turned out great! I have to admit I did add some extra bacon!! YUM-O as Rachael Ray would say!!!

Skillet Sweet and Tangy Chicken

This was pretty good. It didn't have the exact flavor that I thought it would. I wasn't sure what kind of vinegar so I used apple cider vinegar. Maybe white would have been better? Anyway, it's a good recipe to have on hand, and it was easy and quick, but I'll play with the spices a bit next time.

Crispy N Crunchy Salad

This is quick and easy to make and uses ingredients that I have on hand, plus it's healthy and it's different than the usual salad or side dish. I have made it several times and my family enjoys it!!! I originally saw Lorri's recipe in my Quick Cooking magazine.

Chicken Scarpariello

Pretty good... Used chicken broth instead of the white wine (thought I had some but turned out I only had red), water and boullion cube... Also, the sauce wasn't getting thick for me so I whisked up a little flour and water and thickened the sauce with that... The family enjoyed it...

Sarah's Rice Pilaf

It's recipes like these that make me wonder why I ever reach for a box of Rice-a-Roni!!! This was simple to make and so yummy! I used vegetable broth which I think sometimes has a better flavor than chicken broth. And of course it needs some salt and pepper to taste. Otherwise, absolutely perfect! This would be a great side dish to pretty much any entree - I served it with Sweet Orange-Sriracha Chicken and roasted asparagus with a lemon vinaigrette - our taste buds were happy last night:)

Pear Salad II

I grew up eating Pear Salad too!!! We still have them at our family reunion every year and for special occasions. It does sound strange but don't knock it til you try it. I think you really do have to grow up eating it to really appreciate it. I don't even like pears - this is the only way I will eat them. So simple and so delicious!!!

Smothered Chicken Breasts

This was very good but a little on the sweet side. Next time, I'll cut the sugar by at least half, and possibly add some pepper flakes or use pepper jack cheese to heat it up a little. We grilled the chicken and added the toppings afterwards.

Honey Mustard Chicken

This was pretty good! However, I do agree that the taste of the gravy does something to take away from the honey-mustard flavor so I added a bit more honey and mustard. It was very juicy and really easy to make!!

Brown Sugar Meatloaf

This was pretty much a perfect meatloaf except for the part about putting the brown sugar and ketchup in the bottom of the pan... Just use it as the topping like most other meatloaf recipes say to do. Otherwise a terrific recipe!!!

Amazing Muffin Cups

We thought these were great! Very easy to customize for my daughter who isn't eating a lot of meat these days - I simply didn't add the sausage to several of the muffin cups. Mine turned out perfectly, although I felt the hash browns are sort of lost in the bottom (and hash browns are probably my favorite part of breakfast!). This would also be good cooked in a casserole dish which would probably appeal more to men - somehow I think a big square wouldn't be as "dainty" as the muffins, but they were perfect for me and my girls!

Pierogi Casserole

This was amazing!!! Definitely a lot more work than just using frozen pierogies but it was worth it in the end. A few recommendations: (1) cook the bacon separate from the onions or it will never cook through properly; (2) add salt and pepper to the mashed potatoes; (3) leave out the garlic. This was delish with sour cream and chopped green onions on top!

Broccoli Ham Bake

I'm not sure where all the negative reviews are coming from... We really enjoyed this dish. I did saute some fresh garlic along with the onions, and added a bit of salt to the cheese sauce. Also used stovetop which is crushed rather than cubed... Not sure how the cubes would work in this dish texture-wise. Overall, we thought it was hearty and full of flavor!
