Southern Peach Cobbler

Made this using Bisquick and it turned out great! I would have normally used peaches but I had some strawberries and blackberries that needed to be used, and it ended up being a great combination. Peach Cobbler still rules though and this recipe is my favorite way to make it - it's the same recipe my Southern grandmother has always used!

Antipasto Pasta Salad

I did make several changes to this recipe, but they were really substitutions rather than changes. Anyway, I just used pepperoni (left out the salami) and cheddar rather than asiago, added some chopped red onion, and used red wine vinegar instead of balsamic. Also I didn't bother with adding the tablespoon of parmesan since frankly, I don't see how much of an impact it could make in this huge bowl of pasta salad. Loved using the Good Seasons salad dressing in this... It's so much better than bottled dressing. This went over very well at a Memorial Day barbecause yesterday - everyone seemed to love it!

Microwave Scalloped Potatoes

These turned out great! Didn't have enough room in the oven so I found this recipe as my Plan B. I used half milk and half cream and added a good sprinkle of garlic powder. Will definitely make these again!

Sarah's Rice Pilaf

It's recipes like these that make me wonder why I ever reach for a box of Rice-a-Roni!!! This was simple to make and so yummy! I used vegetable broth which I think sometimes has a better flavor than chicken broth. And of course it needs some salt and pepper to taste. Otherwise, absolutely perfect! This would be a great side dish to pretty much any entree - I served it with Sweet Orange-Sriracha Chicken and roasted asparagus with a lemon vinaigrette - our taste buds were happy last night:)

Brown Sugar Meatloaf

This was pretty much a perfect meatloaf except for the part about putting the brown sugar and ketchup in the bottom of the pan... Just use it as the topping like most other meatloaf recipes say to do. Otherwise a terrific recipe!!!

Famous Butter Chicken

This was really good! I think the key is using chicken breasts that are on the thinner side. This tastes very similar to the Sweet Cracker Chicken that a local diner makes - I may have to experiment a little to come up with the lemon butter sauce that they serve theirs with!

Autumn Spice Ham Steak

This was just wonderful and perfect for fall! I just sauteed up the apples along with some sliced onions, cut my ham steak into strips and added it to the pan, and then topped it with regular pancake syrup and pumpkin pie spice, and simmered it for a little bit. Didn't bother browning up the ham steaks cause it tends to dry them out.

Beef Tips and Noodles

This was easy and delish... I love things that you can get into the oven quickly and just leave them for a while. Served over buttered noodles with some green peas and crescent rolls on the side. Great Sunday night dinner! Oh and the house just smelled fabulous while it was cooking!

Amazing Muffin Cups

We thought these were great! Very easy to customize for my daughter who isn't eating a lot of meat these days - I simply didn't add the sausage to several of the muffin cups. Mine turned out perfectly, although I felt the hash browns are sort of lost in the bottom (and hash browns are probably my favorite part of breakfast!). This would also be good cooked in a casserole dish which would probably appeal more to men - somehow I think a big square wouldn't be as "dainty" as the muffins, but they were perfect for me and my girls!

Raspberry Kielbasa over Cheese Grits

This was pretty good but didn't quite have the pop of flavor I was expecting. I left out the mushrooms like many of the other reviewers but otherwise made the recipe as is. Be careful with the type of grits that you have - just use the package directions rather than the ones above. And being from the South, some margarine/butter and some salt are essential to good grits!

Easy Apple Coleslaw

Thought this was really good... Liked the addition of brown sugar rather than white... All it needed was some salt and pepper to taste! Was perfect with my Chicken Cordon Bleu sandwiches and cajun french fries last night!

Pierogi Casserole

This was amazing!!! Definitely a lot more work than just using frozen pierogies but it was worth it in the end. A few recommendations: (1) cook the bacon separate from the onions or it will never cook through properly; (2) add salt and pepper to the mashed potatoes; (3) leave out the garlic. This was delish with sour cream and chopped green onions on top!

Broccoli Ham Bake

I'm not sure where all the negative reviews are coming from... We really enjoyed this dish. I did saute some fresh garlic along with the onions, and added a bit of salt to the cheese sauce. Also used stovetop which is crushed rather than cubed... Not sure how the cubes would work in this dish texture-wise. Overall, we thought it was hearty and full of flavor!

Fiesta Ravioli

This was soooo good!!! Made it just as the recipe called for, except that I didn't bother heating the sauce and the salsa in another skillet - I just heated it in the pot that I cooked the ravioli in while the ravioli was draining. This is definitely on the cheesy side so I think you could cut back a bit on the cheese if you wanted to... Also, I thought this was the perfect meat:pasta ratio so I can't really imagine adding other meats to it. This was a very hearty/heavy dish - it was great served with a tossed salad with a salsa/ranch dressing. Will definitely make it again!

Crunchy Romaine Toss

This is so good, I would give it more stars if I could! I have made it several times. I use a bag of precut romaine hearts and substitute red bell pepper cause we don't like raw broccoli... I also double the noodles and saute them along with the walnuts in the butter (to which I add the seasoning packets). Definitely wait until right before serving before adding the dressing and the noodles. It is delish!!!
