My cooking triumphs
My biggest cooking triumph is a work in progress--since I became a vegetarian, I have challenged my creativity and my skills in making meals that are healthful, balanced, and easy enough to serve during the week. I am proud to say that I am vegetarian and my cooking (and eating) has been brought to a whole new level.

Blueberry Coffee Cake I
Being that I did also make some changes, I gave it four stars, but the cake is SUPER AWESOME. I used a bit less flour and a touch more milk. Mixed in the berries and only used half the streusel topping. It's really moist and delicious and a great texture with that streusel kind of baked in! Thank you for this lovely cake!

Ima's Potato Salad
I love this potato salad! The first time I made it was right after we got back from Israel. I was so inspired by my sister-in-law's amazing Shabbat meal for 16 (!!!) that I had to do an Israeli Shabbat at our house. Best potato salad ever and I love the pickles, but NO ONIONS!! Yay! Thank you for giving me the ability to bring a little Israel into Texas for my Israeli husband!!!

Quinoa Black Bean Burgers
OMG!!!!! I want to thank from the bottom of my heart! These burgers are super easy, super cheaps, and super super delicious!!!!! This is a great recipe and very easy to customize--change up the seasonings and the kind of beans for whatever kind of burger you want. I am minorly obsessed with these burgers right now. They are satisfying, healthy, and hearty at the same time. The first time I made them, I did a de-constructed burger sort of thing...made a salad using the Honey Mustard Dressing II from this site and served the burger on the side with ketchup. Delish! Now, I'm experimenting with all kinds of burger and steak seasonings. Totally awesome recipe. THANK YOU SOOOO MUCH!!!
