amazing! i took the roast out at 140 degrees and after tenting for 10 mins, it went up to 150... a bit too medium for us. next time (and there will definitely be a next time!) will take it out at 135 and hope to see medium rare! but still very tender and melt in your mouth texture. overall an easy dinner that impressed guests who wondered if i had been slaving all afternoon. while roast we sitting in the oven, i prepared a salad, mashed potatoes, veggies, garlic toast and gravy in under an hour.
