Mother's Applesauce Muffins

So good! I just whipped these up in no time for my 1 and 3 year old. I cut the recipe into a 4th of this and it made 12 mini muffins that were overflowing (the more muffin top the better :). I used twice the cinnamon and no allspice. I left the raisins out of half the muffins since my 3-year-old doesn't like them and just put sprinkles on hers. They turned out so soft and moist. Both of the kids are tearing them apart right now. I'm pretty sure these required less of my attention than pancakes so I will be making them again

Mini Meatball Subs

Great! I made these for they guys for lunch while they were roofing. I made full size subs using whole wheat hoagies. I used a little less onion and green pepper and added red pepper. They had some spice to them. I also toasted the buns first and then made the sandwhiches and toasted them like the recipe says. The bread didn't get soggy this way. Thanks for the awesome recipe, I will use it again.

Best Brownies

These are great. I didn't change the recipe, but I did just make half and do 6 cupcakes. They were so good and didn't fall apart like cupcakes, since of course they are brownies. I put the batter directly into the greased pan(no paper cups), they came out nicely and were pretty too!

Easy Chicken Rice Casserole

A couple different things. Running the oven for 90 minutes would heat the house too much(small) so I cooked the chicken first. It baked for about 25-30 minutes and was perfect. I added a couple extra spices, we always play with them. I also topped it with shredded cheddar cheese and french fried onions before baking.
