Chicken Enchiladas II
Just made this for the second time in two weeks. No leftovers, my kids love it! The first time I made it exactly as the recipe called for, except I substituted a can of green enchilada sauce for the green chiles, as my children do not like them. Our only complaint then was that there wasn't more of it. Tonight, I used more green enchilada sauce... both in the internal sauce, and then drizzled over the whole pan before popping in the oven. Fabulous. I realize this is not a traditional enchilada dish, but it's divine. Even better, it's EASY. Will be making this regularly.

Crispy Fried Chicken
I've been trying different recipes for the last couple years, until I found this one. The technique is by far the BEST for getting crispy fried chicken, that is moist and tender every time. My four year old asks me all the time when I am going to make "that crispy chicken" again! And after you cook it, the oil used is almost exactly the color it was when it went in the pan, with very little to NO residual bits... I would say, that depending on taste, you might want to increase or change the seasonings added to your flour. Elaine DOES say that should be tweeked. I add mounds of salt and pepper, garlic salt, onion powder etc etc.

Slow Cooker Lentil and Ham Soup
I can't wait to make this again! It was only the second thing I've cooked in my slow cooker, and it was awesome. I did two things slightly differently. Because I have a 6qt. crock pot I increased my veggies by about 1/2 c each, and appx. 3 cups ham. I also threw in the ham bone. (I found this recipe looking for uses for too much leftover ham). I also increased my liquid a tiny bit... Ok, this made my house smell so wonderful that I could not wait the entire 11 hours. I dished it up at 9.5 hrs and it was perfect. Next time I will add a bit more lentils, and test it at 8 hrs. Fabulous and easy recipe!
