Kentucky Butter Cake

This was good, but I should have doubled the glaze--it ended up being somewhat dry in some places, but where the glaze settled, it was gooey and yummy.

Ricotta Spaghetti

I am so sorry, but I really didn't like this. Maybe if I had sauted the garlic ahead of time, it would have been better, but it really needs something--maybe some tomato sauce to brighten it up a bit.

Low Sugar Strawberry Rhubarb Crunch

I love rhubarb--I can even eat it raw all by itself--but this was just too sour for me. I ended up having to sprinkle sugar over the top of each serving and add a generous dollap of cool whip to cut the tartness. Which is really a shame b/c I love the idea of this recipe. One of my friends said she liked it, but the other also thought it was too sour.

Baked Asparagus with Balsamic Butter Sauce

Switched the balsamic vinegar & soy sauce amounts and sprinkled a wee bit of garlic powder over the asparagus as it was cooking. Sensational and I can't wait to have the left-overs tomorrow!

The Best Bean and Ham Soup

I know I'm in the minority here, but this did not turn out right at all. I used a honey-glazed ham and bone left over from Thanksgiving, which gave the soup a disgusting sweetness that I could not get rid of, no matter how much salt I added. Also, just an FYI for those of you trying this with crockpots--it took WAY longer. The beans were still cooking after 10 hours when I finally went to bed. Unfortunately, I'm going to have to throw away the soup. Maybe it would have been better with a regular ham?

Delicious Ham and Potato Soup

I made this with no changes, except that I just eye-balled the potatoes & onion. This soup was amazing and makes great left-overs. I will definitely make this again--it's cheap and delicious and perfect for cold evenings!

Butter Chickpea Curry

Downeast Maine Pumpkin Bread

I made two larger loaves w/ this recipe. Next time I'll bump up the spices to give it even more flavor--maybe my spices are old, but it didn't have a real kick, more of a mellow pumpkin flavor. Very nice crust and very moist inside. With the larger loaves, and at a high elevation, it took over an hour for the loaves to bake.

Italian Sausage Soup

Very good soup. I did as suggested & used two cloves garlic & added one can low sodium chicken stock. I also added uncooked pasta shells during the last 12 minutes of cooking (before adding frozen spinach), and they cooked up just perfect. Delicious! I'm sending this recipe to all my friends!

Cajun Shrimp

Nice spice--as a fellow Texan, I figured I could stand it a bit hotter and used 1/4 t. African Cayenne Pepper--yeah, that was a bit too much. But the overall taste was really good!

Dad's Pan-Fried Green Beans

A little too sweet for me, but I think that a lot of people would like this recipe. My brother makes a dish similar to that, and we're going to combine the cooking techniques of this recipe with his marinade and think it'll be just right! Thanks!
