Grandma Johnson's Scones

I have been wanting to make my own scones since I went to London 2 yrs ago! Store bought and even bakery ones I've tried...were never just quite what I hoped. I just made these scones!!! OMG they are better than good, they are even better than the ones I had in England...(ok it's been 2 yrs but still!) I knew ahead of time I was going to add white choc chips (1cup) and cranberry/cran raisins, (1cup) I cut them out in heart shapes...they look as good as they taste...moist, yet still have that scone consistency...I used 3/4 cup sugar instead of a cup, since I added the white choc chips..still wonderful! Will try different combinations next time.

Fresh Tomato Pie

Absolutely scrumptious! Made it for my 'picky' 17 yr old and myself last night as I have lots of fresh tomatoes avail. Anyway..followed instructions pretty much however I did slice and squeeze out excess seeds etc from tomatoes, then set on paper towels to drain for about 30 min. After first baking of crust I diced onion and then sauted for about 5 min (as others suggested) then put onions on crust, then added some shredded chedder over onions to keep crust dryer. Then followed rest of instructions, as well as adding some shredded mozz over top too. Eating it again now for 'breakfast' if you can imagine and it's just as good and NOT soggy! PS..daughter LOVED it!

Pizza Without the Red Sauce

I literally just finished eating my pizza! Delicious! I used what I had on hand...so some variations, (which makes it nice) I used a basil pesto, no spinach, diced/canned tomato (green pepper/onion flavors) sliced onion and mozz cheese. STILL was AWESOME - did use the butter, the oil, added fresh garlic and some dried oregano...baked - and inhaled it! :o) A keeper for sure! Can't wait to try other variations.

Hot Artichoke and Spinach Dip II

OMG..this stuff is awesome - I am literally munching on some I just made for the first time, on a Club Cracker as it's all I had available. Tastes great on the cracker by the way. I made this for my teenager who loves a similar recipe at a nearby restaurant. This is as good or better if you ask me! I did a couple things different...as it was just my preference. I mixed the mozz in with the entire mixture as someone said it's hard to eat with it all on top..(which I would agree), I also added double the amount of mozz as we love it..didn't come out as too cheezy. I also omitted the garlic salt (thank goodness as I think it would have been too salty with the Parm/Romano cheeses (which are salty anyway). Instead of the garlic salt as I love garlic, I added 2 gloves minced - perfect! Again..this is yum yum yum...I will be making it for my daughter's graduation party this summer...but in larger amounts! Enjoy everyone!

Sweet Corn Bread

Hands down this is one awesome cornbread! I've made it 3 times in the past 3 weeks and today I'm bringing it to Thanksgiving dinner as one of my contributions! Delicious warm or cold, with or without butter (I like any excuse to slap a little butter on anything!) Enjoy folks it really is wonderful.

Pumpkin Chocolate Chip Muffins

I made this recipe this week, but realized I loaned my cupcake/muffin pans out - so I made it in a loaf pan. Turned out awesome! I did use brown sugar in place of white, and added more chocolate chips and a full cup of the pumpkin but other than that followed the recipe - I baked it for 40 min. DELISH!

Carrie's Artichoke and Sun-Dried Tomato Pasta

Scrumptious! Just made it for lunch...ate half of it myself!! :o) I'm vegetarian..but can see easily adding shrimp for those wanting more protein etc. I used veg broth instead of wine and did not use the oil from artichokes. Still yummy.

Creamy Tomato Soup

Just finished a small bowl! Wonderful! I did halve the recipe...used chicken stock instead of milk and used fresh garlic (1 clove) instead of garlic powder. YUMMY! Obviously you can make as little or as much as you like. Awesome

Mock Tuna Salad

Really good. I used a small can of chickpeas to experiment...used grey poupon mustard and mayo, onion and dill relish! Am taking it for lunch today. What a treat! I will make this weekly! A nice inexpensive, healthy treat!

Vegetarian Tortilla Stew

Very good and EASY..which is key for me...I used 2 cloves fresh garlic and vegetable broth instead of bouillon/water. Also added some red pepper flakes...I was so hungry I had some as soon as done..lol..but I can see as someone else stated, I bet it will have an even better flavor tomorrow! Thank You!

Crustless Spinach Quiche

scrumptious! Just made it this morning and yum! I used about 2 cups swiss and 1/4 cup light cottage cheese to finish it up...also did the tomatoes on top. Again....YUM Thanks for the recipe!

Cranberry Walnut Relish I

Scrumptious! :o) Just made it again (first time last year) and am always so impressed with how easy it is! I used 2, 12oz bags of cranberries and 1/2 cup sugar...after came out of oven used about 3/4 of the orange marmalade. Didn't use the lemon (berries are tart enought to me) - and left out the walnuts due to some being allergic to nuts etc. But still simply delicious!! Am planning on using this to fill the Cream Cheese Mini Tarts with this! Should be great!

Crepes

Holy moly...just ate 2 of these right from the pan..lol...didn't even bother with filling as I wanted to make sure they were filling 'worthy'. They are!! Not a fan of maple syrup since a kid...a little butter and powdered or granulated sugar sprinkled was fine. But I can't wait to do some yummy fillings. I did add about 1/2 tsp vanilla and used almond milk as I don't do reg milk. Can't wait to make these again and experiment with all the options. Great recipe!

Suki's Spinach and Feta Pasta

Yummy and easy! I used canned diced tomatoes with basil/garlic/oregano spices...the rest the same as recipe...did not add feta until we had it on our plates. A nice 'go to' meal...as I don't eat meat this is great...but as others have done, can easily add chicken, shrimp etc. Thanks for recipe that is healthy and yummy

Black Bean and Couscous Salad

Just had my first bowl! Yum. I stuck pretty much to the recipe...did ad a clove of minced fresh garlic..could still add another as I love garlic! Since it's just me, I used one of those boxes of Near East Cous Cous with Pine nuts (dont' need the chix broth when use this as it has season packet when you make as directed) I used 6 green onions, chopped red pepper, frozed (thawed) corn, crumbed feta, some sea salt and pepper to taste. Oh..and I only had white navy beans. Quite yummy and will be going back for my second helping! (black olives would be good in this as someone else mentined)

Sue's Taco Salad

Delish! I don't eat meat so I added some taco seasoning to rice..and made mine separate..(boyfriend had the ground beef).(actually left out the beans for this time) We used half catalina and half ranch dressing - Thanks Sue for a new go to meal! :o)

Spaghetti with Broccoli and Mushrooms

Quite yummy! I added some rotisserie chicken to part of it...for my guy...but I did fine with reg mushrooms and I had some portabella too. I used fresh garlic, mushrooms, broccoli (steamed it a bit first) and didn't have any basil. Added cheese at the end..and used a bit less butter. All in all would make again..and maybe use fresh spinach next time. Thanks Denise for quick go to meal!

Cucumbers with Dressing

Ok...just made this...didn't use ANY sugar...used mayo and light sr cream...few splashes of rice vinegar and some salt! YUMMY! Remembering mom made this alot...glad to find it to enjoy again! :o)

Absolutely Fabulous Greek/House Dressing

I made it with equal parts oil and vinegar...and used 1 clove of fresh garlic instead of powder. YUM! I think I will leave out oregano next time as I can take it or leave it...but overall I will be using this as my own 'house' dressing! :o)
