Pizza Without the Red Sauce

I literally just finished eating my pizza! Delicious! I used what I had on hand...so some variations, (which makes it nice) I used a basil pesto, no spinach, diced/canned tomato (green pepper/onion flavors) sliced onion and mozz cheese. STILL was AWESOME - did use the butter, the oil, added fresh garlic and some dried oregano...baked - and inhaled it! :o) A keeper for sure! Can't wait to try other variations.

Fresh Tomato Pie

Absolutely scrumptious! Made it for my 'picky' 17 yr old and myself last night as I have lots of fresh tomatoes avail. Anyway..followed instructions pretty much however I did slice and squeeze out excess seeds etc from tomatoes, then set on paper towels to drain for about 30 min. After first baking of crust I diced onion and then sauted for about 5 min (as others suggested) then put onions on crust, then added some shredded chedder over onions to keep crust dryer. Then followed rest of instructions, as well as adding some shredded mozz over top too. Eating it again now for 'breakfast' if you can imagine and it's just as good and NOT soggy! PS..daughter LOVED it!

Grandma Johnson's Scones

I have been wanting to make my own scones since I went to London 2 yrs ago! Store bought and even bakery ones I've tried...were never just quite what I hoped. I just made these scones!!! OMG they are better than good, they are even better than the ones I had in England...(ok it's been 2 yrs but still!) I knew ahead of time I was going to add white choc chips (1cup) and cranberry/cran raisins, (1cup) I cut them out in heart shapes...they look as good as they taste...moist, yet still have that scone consistency...I used 3/4 cup sugar instead of a cup, since I added the white choc chips..still wonderful! Will try different combinations next time.
