I loved this as well and served it for Easter dessert. At the suggestion of others, I included cream cheese and whipped it a fairly long time with the pink lemonade concentrate and sweetened condensed milk. I froze mine for a few hours prior to serving it. I let it thaw for about 20 minutes and it was perfect in texture and taste. Thank you for a wonderful recipe and helpful suggestions from others.

Best Carrot Cake Ever

Lemon Curd Bars

My family loved it. I added the coconut and some lemon zest to the lemon curd and found this recipe to be the one to replace the traditional lemon bar recipe. Love the variation in textures between the cookie-like crust and the coconut with the lovely lemony smoothness. Thanks so much for this recipe!

Excellent Broccoli Cheese Soup

I made this last night for dinner. We thought it was really good. The only modifications made were adding a bit of fat free half n half as part of the liquid total. We also sprinkled on a bit of thai chili powder on top for extra zing. This is a keeper. Thank you for sharing it.

Chicken Nut Puffs

I took other reviewers' suggestion and added in dry roasted thai chili powder (just a pinch)and sharp Cheddar cheese. I also added garlic powder and a pinch more seasoned salt than called for. The party attendees I served this to really liked it. I thought they were actually tastier at room temp than just out of the oven. Served them a 2nd time with soup for dinner and the family liked them very much. I will save this recipe and make it again. Thanks to Karen Bush for sharing it.

Holiday Green Gelatin Salad

I am so thrilled to see this recipe as it has been a family favorite for generations in our family as well. We always thought that our family was the only one that liked it as in-laws and others did not appreciate it even slightly! In our family we included, if you can believe it a teaspoon or more of prepared horseradish! Gives it a kick and is completely bizarre to wrap your head around but it works. Ours also used walnuts from the family farm in Gridley, CA. This recipe made me very nostalgic for wonderful holidays during my youth. THANKS!

Thai Chicken with Basil Stir Fry

Loved the sauce. My husband likes the restaurant version of minced chicken but the whole family thought the recipe was delicious. The dish was easy to prepare and the sauce was fun to make. I slow roasted the garlic and onion and that added a slightly sweet flavor.

Grandmother's Buttermilk Cornbread

Ranch Bean Dip

This recipe has become a favorite amongst our many nieces and nephews. It is delicious and easy and one of my nieces has started taking it to get-togethers with friends. The grown-ups like to add salsa.
