Spicy Vegetarian Lasagna

Reviewed: Aug. 22, 2012
I fixed this last night and my husband, Rick & I liked it. I did substitute a squash for some of the peppers and added some garlic. For the water I used chicken stock. I figured that would give it more flavor. I can see using different veggies in this. Thanks for a great recipe idea.

Honey Mustard Grilled Chicken

Reviewed: Apr. 24, 2012
I made this last night and my husband Rick & I really liked it. We grilled breast, leg & thigh. The sauce has a nice tang from the mustard and sweet from the honey. I did add a splash of beer to rinse out the mustard bottle. Didn’t want to waste the mustard and not water the flavor down! I think this sauce would be good on pork too. Thanks for a good idea.

Potato Minestrone

Reviewed: Mar. 5, 2012
Made this the other night and it is a good soup. I did make a few changes. Couldn’t find garbanzo beans (store didn’t have canned and didn’t have time to soak dry ones), used all chicken broth (that’s what I had on hand), fresh potatoes, onions, garlic and carrots. Forgot about the peas but this turned out really good without them. This would lend itself to any veggies you have on hand and is very hardy. My husband Rick really liked it and he usually wants some type of meat with his meal! Thanks for posting the recipe. It’s always fun to try different ideas on classic dishes. I should have also added that this is even better the next day or two. The flavors are more developed. Last night I reheated it with chunks of baked chicken breast and it was even better. Try it its good.

Spinach with Apples and Pine Nuts

Reviewed: Nov. 21, 2011
I made this the other night and my husband, Rick & I liked it. I didn’t have the pine nuts. The store I was at didn’t have them! I will use them the next time. I did add a bit more garlic than called for. Thanks, it is always fun to try new recipes.

Apricot-Pecan Sweet Potatoes

Reviewed: Nov. 21, 2011
I made this the other night and my husband, Rick & I liked them. They are very sweet. The next I make them I’m going to use less brown sugar and use the juice from the orange and cut the apricot juice by the same amount.. We are planning on taking these to our family Thanksgiving get together this week. Thanks for a great idea. It is always fun to try new recipes.

Slow Cooker Oats

Reviewed: Sep. 27, 2011
I've made oats in the crock pot for years. Instead of water I use milk or soy milk. The water alone is too bland. This is a great starter and lends itself to additions like adding a tablespoon of peanut butter or toast some walnuts or almonds and add to the pot and let cook with the oats. Try maple with the vanilla extract. Thanks for posting the recipe.

World's Best Lasagna

Reviewed: Mar. 5, 2011
While this is good, I don’t think it is the worlds best! It needs more seasoning, onions & garlic. I didn’t add the salt with all the salt in the other ingredients I felt that would be way too much. Nor did I add the sugar. Grew up with Italians and they never added sugar to their sauces! This is an investment in time but I think with some tweaking it will be good and worth the time. Thank you for a great idea. It is always fun tiring a different version of a recipe. We can always learn something new!

Dreamy Nighttime Drink

Reviewed: Apr. 10, 2010
This is a nice ending for the evening before going to bed. Does it make you sleep better? I don't know but it can't hurt! Just a nice way to slow down just before you go to bed. Have made several times. I do add a little more vanilla, honey & cinnamon than called for. The 1st time I made this I did follow the recipe as written. Thanks for the idea.

Caramel Apple Pork Chops

Reviewed: Nov. 8, 2007
My husband & I enjoyed these chops. I did put the chops back in the pan and let them simmer with the sauce for a little while. I used Granny Smith apples and they where a nice contrast with the sweet of the brown sugar. Thanks for a great idea.
