Pumpkin Chocolate Chip Cookies

These were yummy and soft. I added 1 cup of soy flour and 1 cup of w.w. flour in place of the all purpose. I also added 1/4 cup of ground flax seeds. I used the splenda sugars in place of the normal sugars. Lastly, I reduced the amount of butter I used to 1/4 cup and added 1/2 cup more pumpkins to replace the moisture. For a personal twist, instead of 1 1/2 cup of chocolate chips, I added 3/4 cup of chocolate chips and 1/2 cup of toffee chips for variety. The cookies were still decadent but the substitutions helped me enjoy them with less guilt!

Red Quinoa Pilaf with Caribbean Flavors

tasty! I switched lentils for edamame because I didn't have any on hand, reduced the onions to 3, and used a habanero pepper instead of serrano. Really a nice dish with a Caribbean flair!

Pumpkin Cream Cheese Muffins

This was one of the better recipes for the actual pumpkin batter. Similar to other members, I also had a hard time with the cream cheese filling. I added 1/2 teaspoon of guar gum to help thicken it up. I also added 1 tsp of ground ginger to the batter and 1/2 tsp to the topping. I substituted 1 cup of splenda for baking for 1 cup of the sugar. I also added 1/3 cup of apple sauce and only 1 tablespoon of olive oil to reduce the fat in the recipe. To make the cream cheese more of a filling than a topping, I filled the muffin cups, poked a hole in the center, and then added the filling.
