Tex-Mex Quinoa Salad

So good - I did change up a bit to my taste. Used 2 fresh tomatoes, black beans and about 4 green onions. I just squirted the juice of 2 limes in and also added 2 cloves of minced garlic. I didnt add any cheese. This was just delicious and I bet its delicious as is - I just cant help myself and end up changing things around a bit ;-) ETA: I cooked the quinoa in veggie broth and added serrano and jalapeno pepper and some frozen sweet corn (just toss in the bowl frozen) - soooo good! Love this!

Ice Cream Cake Roll

Yum! This was a big hit with the family! I did find that 15 min was too long, my cake probably baked in 10 min, so watch it close. I was worried about the cake as the batter had a very wierd texture, but it turned out just fine. I made the chocolate sauce, easy and delicious and it makes a lot. I thought it was much better then store bought chocolate sauce. And yes, the cake is low fat, so if you are watching fat intake, use low fat frozen yogurt in place of ice cream and you'll have a delicous treat...I bet some fresh strawberries or bananas would be wonderful on top.

Unique Spinach Noodles

My first attempt at homemade noodles! I followed DarcieA's advice - used my food processor, did not cook the spinach and did not add any water. I rolled out by hand and cut with my pizza cutter (without rolling first). I let air dry for a bit and then bundled into individual serving sizes, placed on a parchment lined baking sheet and froze (placed in plastic bags once frozen). To cook, I got my water good and boiling and dropped the pasta in frozen, it took mine just a bit over 3 min to cook. I loved it but found it too thick, I may need to invest in a pasta machine to get it thin enough :-) Cant wait to try this again! Its such a pretty green color!

Pesto Quinoa

This was so simple and tasty! I did add 3T of pesto, used veggie broth and a bunch of little grape tomatoes. Then I decided to add more - some baby spinach, black olives and garbanzo beans. Nice addition to my "quinoa recipes". Thanks.

Roasted Red Bell Pepper Soup

This was really good, simple and easy to make too! My peppers may have been small, I'd like a little more of the pepper taste so I may add an extra pepper. I might even play around and try just a little tomato in it. Its really good as is though, I sprinkled some baked tortilla strips on top. Yum Yum Yum! OK, I had to revise my review. With my changes....I prefer using great northern beans (not sure why they made a difference to me?) and I used 4 roasted peppers and put in a small can of whole tomatoes. Perfection! I also use veggie boullion cube instead of chicken broth as I am a vegetarian. I love this soup!

I didnt even proof my yeast correctly or let the dough rise and these turned out so delicious, I cant wait till I have the time to make them correctly! So good - I just flattened the balls of dough out with my hand and fried in my new cast iron pan - ate with the hummus III recipe from here - YUM!

Nicole's Winter Carrot Zucchini Bread

These were just what I was looking for to make for my boys to eat for breakfast. I used 1.25 cups AP flour and 1.25 cups white whole wheat flour, 3 eggs and I put in about 1/3 cup grapeseed oil. I also cut back the nutmeg and cloves a bit as they were for my boys (also left out nuts and raisins for my picky eaters) - if I was making them just for me, I'd have done all the spices and tried it without the oil. They came together beautifully (I made muffins - took 22 min to bake) and each boy has already eaten three (I just took them out of the oven). They are very moist and flavorful. Thanks Nicole for the wonderful recipe!!

Potato Curry

After reading all the reviews, this is what I did - I used ghee, probably doubled all the spices - I did big heaping tsps and then tasted as it was cooking and added more along with garlic powder (fresh garlic would've been better, but I was lazy) - I did the water and a cup of coconut milk and also added a can of garbonzo beans and instead of peas I used chopped baby spinach. It's really good!! Spicy and comforting - way better than my generic curry powder.

Couscous Salad with Dried Cherries

Quick, easy and delicious! I added some baby spinach and used quinoa instead of couscous - kept everything else the same! I used 1 cup dry quinoa, simmered in 2 cups veggie broth for 15 min. I think it would be delicious with couscous or even orzo pasta! I also chopped the dried cherries up as they are pretty large. Update : day 2 - didnt care for the mustard taste and the cherries - I had to change my 5 star to 4 - its still good :) I will leave out the mustard next time - the flavor was much stronger after sitting over night.

Caramel Shortbread Squares

A grown-up twix bar. These are so good and very addictive. I doubled and did the 9 X 13 pan - I did have to cook my shortbread layer for almost 30 min to get it done all the way. The tip to score and then refrigerate, then cut was great. They came out beautifully!

Roasted Red Pepper Spread

I am new to canning and gave this recipe a try. It is delicious!! I ended dipping my bread in it, but I know I will love it as a pasta sauce, pizza sauce or for just dipping bread into. I may even try making soup with this.

Jay's Signature Pizza Crust

I finally got around to trying this - it is the best pizza crust I've made! I used my bread machine and let it rise in the machine - rolled out for my large pan with holes - it made a thicker type crust, very bubbly, next time I'll prick with a fork before baking. I baked for 10 min at 475 and then topped it and baked till cheese was starting to brown. Crispy on the outside and bottom and light and airy on the inside - thanks for the wonderful recipe!

Stephanie's Freezer Spaghetti Sauce

I scaled the recipe back as I only had about 3.5 cups chopped tomatoes, left out the green pepper, sauteed on the stove, extra garlic and extra basil and oregano, used olive oil - I was too impatient and only simmered for an hour, it's delicious! It is sweet, but I like sweet.

Vegetarian Tortilla Soup

I made this soup vegan and while it is good it seemed to be lacking something. I used fresh peppers, two red and one orange, and a fresh onion. I think I may try roasting the peppers and maybe adding a little chili powder. I'm thinking stewed Mexican tomatoes blended up would be better than crushed tomatoes. I also put in one can of black beans, it would even be good with two. So its definitely worth your time to make (its very simple) and then you can modify to your tastes. I've come back two days later to add to my review. This soup definitely tasted better the next day, and I also pureed the rest in the blender and liked it even better! I ate without any tortilla's and it was delicious!

Spicy Slow Cooker Black Bean Soup

This is good, I dont know if I think of it as soup though, I'm eating over rice and its delicious. I did 2 tsps granulated garlic - I love garlic! 1 jalapeno with some of the seeds/membranes, about 1/2 tsp cayenne and no black pepper - the rest of the spices I kept the same. I also added some chopped green pepper. I love these kinds of meals as you can change it up and serve it different ways, and beans freeze well. It does smell more flavorful than it actually is, but its easy to add stuff to get the taste you want. I love that its inexpensive and can be done in the crockpot or on the stove. OH - mine is not too spicy - but it all depends on the heat of your peppers and types of chili powders/hot sauce. I used the tabasco chipotle sauce - you can always leave out the cayenne and hot sauce and add to taste when the beans are done. OK - I had to come back and change my rating to 5 stars...I've still got my beans cooking and added a bit of flour as I want it to thicken up a bit, but the flavor has just gotten better and I keep eating bites out of the crockpot - I'm going to keep cooking longer to let it thicken, but this is really good!

Jo's Rosemary Bread

This is GOOD! It does taste like the bread at Macaroni Grill. It turned out softer though, I'd love to get a chewier crust, but I wont complain! I used my bread machine to make the dough and then baked in the oven at 375 for 30 min (I tested at 20...not quite done all the way through). I drizzled olive oil on top and sprinkled with sea salt flakes after I took it out of the oven, the loaf is beautiful and so yummy!

Enchilada Meatballs

I made without any changes. It was for my dh, I do not eat meat. He said it was a bit bland. I would've added more seasoning (maybe some garlic, onion, etc), but wanted to try it as written as he tends to like simple things :-) If he thought it was bland...well, I'd definitely spice it up if you are trying. I served it over rice with onions and green peppers that I sauteed. He doesnt like taco seasoning, so I didnt try adding any to the cornbread, but I bet that would add some flavor.

Pumpkin Chili Mexicana

I made a vegetarian version, used 2 cans of black beans and one can of pinto beans. I increased the spices/seasonings, added extra corn and some chopped green bell pepper also. I blended my tomatoes up before adding as I don't like tomato chunks in my soups/chili's :-) This is really good and so good for you!!
