Vegetarian Tortilla Stew

I was very pleasantly surprised when I tried this. Very good and so easy! I did add the whole can of tomatoes by mistake, but think I'll always do that. I also added a can of black beans along with the pinto, no veggie chicken and I added extra cilantro, a little extra chili powder and cumin. I bet this soup is very easy to suit to your individual taste.

Buckeye Cookies III

Easy and delicious! My four year old enjoyed helping me roll them into balls, and then he poked them all with toothpicks. Nice and creamy, we ate them all and now need to make more for Christmas.

Simple Sugar Cookies

What did I do wrong? All the reviews were so good. Mine were way too soft and I couldn't even spread frosting on them without them breaking. They puffed up while cooking, but then flattened out, so they are very thin and fragile. I tried to decorate them without ruining them, but ruined about half as they just fell to pieces when decorating or moving. They did taste good, but didnt work for me.

Tantalizingly Tangy Meatloaf

My husband LOVED this meatloaf (I'm vegetarian, so I didnt try it). It's the best meatloaf he's had and its probably the simplest one I've ever made. I doubled the sauce, cooked the meatloaf 30 min, took out and poured sauce on and cooked 25 more min. The only drawback is that it didnt make much...8 servings? Minus a small piece for my boys, my husband ate the whole thing in one sitting :-)

Ice Cream Cake Roll

Yum! This was a big hit with the family! I did find that 15 min was too long, my cake probably baked in 10 min, so watch it close. I was worried about the cake as the batter had a very wierd texture, but it turned out just fine. I made the chocolate sauce, easy and delicious and it makes a lot. I thought it was much better then store bought chocolate sauce. And yes, the cake is low fat, so if you are watching fat intake, use low fat frozen yogurt in place of ice cream and you'll have a delicous treat...I bet some fresh strawberries or bananas would be wonderful on top.

Lentil Soup

This is good if you play around with it to suite your tastes. I used veggie broth and a lot more than called for as I wanted it soupier. I doubled the spices like many have suggested and used balsamic vinegar (a little less than called for, it's a bit overpowering to my tastes). I added extra spinach as it really cooks down and the whole 28 oz can of crushed tomatoes. Much better than canned lentil soups, but I did feel it was missing something.

BBQ Chicken Pizza II

My hubby gives it 5 stars (I'm vegetarian, so didnt try it). Easy! I made a homemade pizza crust, dumped on some bbq sauce, the cheese, chicken and veggies. My hubby does not like chicken and I'm desparately trying to find chicken recipes he'll like to rotate in with all the beef he eats! This was a winner with him and me as its is soooooo easy!

Strawberry Spinach Salad I

I made quite a few changes, as I was searching for something a little bit different then this. I made the dressing as written except I omitted the paprika and sesame seeds. I used red wine vinegar and added extra (maybe 1/3 Cup), then I put about 1/2 tsp salt, some fresh black pepper and maybe 1/2 tsp or so dried mustard. For the salad, I mixed baby lettuce with baby spinach and chopped up a couple green onions. Delicious :) It makes a lot of dressing!

Sarah's Salsa

This was pretty tastey. I used lime juice instead of lemon and added extra onion and a tsp of salt. It would be good with some fresh tomato mixed in with the canned. I think a finely chopped green pepper would be a nice addition also. After reading the warnings about blending it too much...I blended it in small batches to get the consistency right.

Quinoa and Black Beans

This was my first time cooking with quinoa. Mine turned out pretty mushy and soupy. It could be the pot I used, it doesnt cook rice well either. This dish was just ok to me, I added a bunch of salsa (Sarah's salsa) and it tastes better. I'm wonering if I'd like it better if I cooked the quinoa separate, then added the ingredients. I think it would be good with green onions and red peppers, black beans, corn and garlic...that would be my preference. ETA: so its a couple years later and I've finally learned how to quick quinoa correctly. I will have to give this recipe a try again, I've learned to watch the quinoa as it may cook quicker and then I can dump out the extra liquid if need be. I bet this recipe is good done correctly.

Black Bean and Salsa Soup

Quick, simple, inexpensive, healthy and YUMMY! Who would've thought just a few ingredients could make such a delicious soup! I put just a little less broth in and pureed about 3/4 of it, I didnt add the sour cream or green onion and it was wonderful! It would be good with tortilla strips sprinkled on top. I'll be making this soup regularly, thanks for the great recipe! I tried the soup again....this time with Sarah's salsa! I added 2 cups of veggie broth and pureed half of the bean and broth mixture, then I probably put 2 cups of Sarah's salsa in. Even better than the first time I made it. You've got to try this soup!

Homemade Black Bean Veggie Burgers

Maybe I did something wrong? Mine were bland and dry...I couldnt even finish one. With all the great reviews I'm tempted to try the recipe again, just incase, but I dont want to waste my time if they come out the same. They sure smelled good as I was making them...just didnt cook up how I thought they would.

Vegetarian Tortilla Soup

I made this soup vegan and while it is good it seemed to be lacking something. I used fresh peppers, two red and one orange, and a fresh onion. I think I may try roasting the peppers and maybe adding a little chili powder. I'm thinking stewed Mexican tomatoes blended up would be better than crushed tomatoes. I also put in one can of black beans, it would even be good with two. So its definitely worth your time to make (its very simple) and then you can modify to your tastes. I've come back two days later to add to my review. This soup definitely tasted better the next day, and I also pureed the rest in the blender and liked it even better! I ate without any tortilla's and it was delicious!

Roasted Red Bell Pepper Soup

This was really good, simple and easy to make too! My peppers may have been small, I'd like a little more of the pepper taste so I may add an extra pepper. I might even play around and try just a little tomato in it. Its really good as is though, I sprinkled some baked tortilla strips on top. Yum Yum Yum! OK, I had to revise my review. With my changes....I prefer using great northern beans (not sure why they made a difference to me?) and I used 4 roasted peppers and put in a small can of whole tomatoes. Perfection! I also use veggie boullion cube instead of chicken broth as I am a vegetarian. I love this soup!
