Mexican Cream Cheese Rollups

I have taken these to parties and just to eat at home. I could eat the whole batch by myself! They have gone over very well with everyone. I do agree with what a few other reviewers said--you do need to like olives and salty foods to enjoy these. I only make a couple of changes. I use spinach tortillas and a light veggie cream cheese. Delicious!

Summer Squash Chicken Alfredo

I'm not surprised we liked this so much...it has several of our favorite ingredients! I actually used turkey because the chicken selection at the store didn't look too good. I used an alfredo sauce with roasted red peppers and added a lot of black pepper to it--delicious. I used garlic-parmesan flavored almond slivers. Otherwise, I followed the recipe exactly and it was awesome. And it made terrific leftovers! Thanks for the recipe.

The only change I made was to use half and half instead of the heavy cream. It turned out perfect. Delicious! We will definitely make this again and again.

Smothered Bacon Chicken

I added a couple of ingredients and modified it, and it was delicious. I cooked the chicken in the oven with the soup and sour cream mix. In a skillet, I cooked a little butter, yellow onion, bacon pieces, and fresh mushrooms, which I topped the chicken with. We love freh mushrooms, so they were a must, and cooking the bacon this way got it crispy. Yum!

Blackened Shrimp Stroganoff

This is one of the best recipes I've found on this site. My boyfriend agrees! I changed a few things, but it would be great the way it is listed. I added scallops because we like them so much. I also cut out the sour cream to be healthier and didn't use any capers. I used a vegetable broth instead of chicken, and only used half as much of the broth (I read other reviews and decided to go with white wine--excellent) and substituted frozen peas for the red peppers. I also used a whole wheat spinach fettuccini. I baked some of the pull apart Pillsbury biscuits just to have something to go with it. We're ready to make it again tonight! Thanks for the delicious recipe.
