Pierogi (Polish Dumplings)

These are awesome. The first time I made them they turned out really well. The second time I created a gooey mess and wasn't sure what I did wrong. The third time they were great again and I realized - make sure the filling cools down to room temp (or colder) before putting it in the dough. Hot filling made the dough wet, gooey and messy. I also found that I needed to liberally flour the rolling pin and the surface I was rolling it out on. Thanks for the recipe!!

Buttermilk Pancakes II

Best I've ever made!! I made these for 3 little girls, so I cut the recipe down to 1/3 but didn't change a thing other than that. 1/3 of the recipe made 11 or 12 pancakes. I can't wait to make the full recipe for my 4 teenage boys. They will eat that many and probably still want more. Thanks!!!

Cha Cha's White Chicken Chili

YUM!! I am kind of wimpy when it comes to spicy food, but I was making this for my boyfriend who loves, LOVES spicy food. He likes to turn red and break a sweat when he eats (very weird). So I used the full amount of cayenne, but I used chopped FRESH jalapeños. I must be missing something when everyone says it's so hot. I didn't think it was even the slightest bit spicy. Maybe is was because of the fresh jalapeños. So I added more cayenne and still didn't think it was hot. I broke out a jar of jalapeño slices and put about 1/4 cup in the food processor and chopped them up. It's perfect for me, but I know it won't be spicy enough for him. But it's sooo super good. I also puréed some of the beans and that was a great idea, thanks to all that recommended it. I made naan to eat it with. I'm so pleased with myself! :-) this stuff is awesome. I must be building up a tolerance to spicy food though. Great recipe. Oh, and yes.. The longer it sits, the better it is. All the flavors really combine.

Rosemary Ranch Chicken Kabobs

We didn't care for this. I can't explain it, kind of bland with a hint of tang. My daughter usually likes anything chicken.. but she didn't eat it. I followed the recipe exactly. Maybe with some tweaking. Sorry

Unbelievable Chicken

I made this tonight for my family - three teenage boys, two 10 year old girls and my husband. I made some on the grill and some of my George Foreman. Both were awesome, and with this crowd we have several different tastes and a couple very picky eaters. Everyone loved this. The only change I made was using Dijon for the mustard. Will definitely make again and again.

Chef John's Macaroni and Cheese

YUM!!! I made this 3x in 2 days. The first time I left the thyme out on purpose, due to other reviews. But then I accidentally left the nutmeg out. It was still fantastic! The next day I made it for my boyfriend and his two teenage sons. They like spicy so I increased the cayenne pepper, but then accidentally left out the Dijon. It was still awesome! But I wanted them to have it with the Dijon so I made it again. I just got the confirmation - they love it!! This recipe is very forgiving. I've tried many others and nobody liked any of them. Until now. This is the best! (I will add that I made it two days ago but didn't bake it. They put it in fridge and then baked it tonight. So it does do well with premaking).

Slow Cooker Italian Beef for Sandwiches

I noticed the seasonings in this were just about the same as Italian dressing mix from this site. So I took that recipe and halved it. Heated 3 cups water in microwave until boiling, put the Italian mix in and stirred. Then poured on top of 2.5 pound chuck roast, added 2 beef bouillon cubes and cooked on low for 10 hours. YUM. Made homemade Italian rolls and topped meat with slice of provolone and broiled on hi for about 3 minutes. It was fantastic!

Chef John's Buttermilk Biscuits

These are excellent! Easy to make and so flaky. I also put the flour mixture in processor and put butter chunks in. Very simple. Then I put the flour/butter mix back in bowl and put in the freezer for a few minutes before adding milk. Brushed with melted butter 5 minutes before they were done baking. Had them with country fried steak and gravy. Yummy!

Bread Maker Doughnuts

Is the dough supposed to rise? I made this twice last night. The first time I ended up with just a ball of dough sitting at the bottom of the breadmaker. Took it out and rolled them into balls (I was making filled donuts) and they didn't rise, and looked a little greasy. So I thought I did something wrong, trashed them and started over. Same exact result.

Delicious Ham and Potato Soup

This is EXCELLENT!! I have always used a popular mix from the store and my family loves it, so I was skeptical.. but this was wonderful! Super easy too. For all the chopping - I used a food processor for the onion & celery (helps to get them small enough to "hide" from the kids) and I used my onion chopper (As seen on TV, I think it's called the Vidalia onion chopper) for the potato and it chopped them to perfect size, and quickly! I can't say enough how fabulous this is - will definitely be making this over and over. Thank you!

Restaurant-Style Buffalo Chicken Wings

I cook a lot, but I tend to stay away from breaded recipes because I've always had trouble getting the breading to "stick". Putting them in the fridge for 90 minutes did the trick for sure! And wow!!! I can't believe how good these turned out! And gave me confidence to try other recipes that require coating... Thank you!!!
