Best Carolina BBQ Meat Sauce

THIS VERSION RULES ALSO, I'M A EAST CAROLINA GIRL BORN AND RAISED. THE ONLY THING I WOULD DO DIFFERENT WITH THIS RECIPE IS CUT BACK ON THE CAYENNE PEPPER SO YOU CAN USED RED PEPPER FLAKES ALSO.

Roasted Garlic Mashed Potatoes

This was really good, I love garlic and potatoes, let me say as a garlic lover that 6 to 7 cloves is plenty. I used all ingredients and I really did'nt measure anything, just ajusted to the amount of potatoes I had. When all was mixed I tasted and they needed something, I had parsley flakes and oregano so I opted for the oregano, the potatoes really came alive and burst with flavor. Just a pinch so as not to overpower. REALLY GOOD!!!. I think next time to save on time, I will use the roasted garlic butter with herbs by (Land of Lakes) just to see if it is close to this end result. Oh well, I served with grilled ribeyes and fried cabbage, Thanks for this great recipe.

Beef Stroganoff III

This was just ok for me, I did as others and I used sirloin, fresh mushrooms, wine ,cream cheese and sour cream, one onion, ect ect. The meat came out very very tender, the sauce was really creamy, but it lacked in taste, I felt like something was missing a spice or herb or SOMETHING!!!! Won't be making this version again, but will stick to my own. thanks anyway. Oh!!! also why is the mustard a ingredient in this dish if not careful it can overpower the whole thing, and I only used half the amount required.

Clone of a Cinnabon

I am only rating the icing, because that was what I made to go on my honey bun cake recipe from this site. It is sooooo good!!! I think much better with the cream cheese, and not just sugar and milk. I don't have a bread machine so I did not make rolls. Hope to ge one soon so I can try the buns.

Cheddar Biscuits

Can I give these more than 5 stars PLEASE??? They were great, so great that I ate three last night for dinner,(shame on me), but I could'nt help it. I did cut the recipe in half and only made four biscuits. Followed directions to the tee, except following others suggestions I did cut the garlic salt in half that I used on the biscuits, glad I did because I could tell it would have been to much. And I think next time I will try adding a little more cheese, These I will be making again, there super easy and super super good. Thanks

Garlic Penne Pasta

This could be a 5 star dish with anyones own ideals, First I would not and did not use the whole pkg of pasta, I used more garlic than called for, I also used fresh greenbeans instead of sun dried tomatoes, and I added some shrimp I also went a little heavy on the pepper. My dish came out great and full of flavor. 5 stars !!!! I only rated it 4 stars for the orign recipe great start though thanks.

Carolina BBQ Pork Sauce

I am from Eastern North Carolina and this is what it is all about, except we use apple cider vinegar, It is mostly used when grilling pork or chicken, you use it as a basting sauce through out the cooking process, we mostly use it for cooking our pigs for chopped BBQ. It can be a little strong if use on meat after it is done, but used correctly it is the best way to cook pork and eat pork, The vinegar is what makes it so famous for being Eastern North Carolina style BBQ. Try it!!! next time you grill ribs or chicken.

Golden Rum Cake

Well where do I begin, if you are not a drinker you may think twice before making this cake. I followed the direction exactly. And while the cake was baking it smelled really great and I could not wait to try. Well when the cake was done I began making the glaze I did as other reviewers I poured half the glaze in the pan reinserted my cake then poured remaining over cake, I ate a slice around 9:30pm later after I had gone to bed around 3:30 am I awoke feeling like I had been out drinking all night, While I don't drink now I use to and this was what it felt like when you have had to much to drink, (A HANGOVER). I mean I was really sick to my stomach, and all I could tasted while gettting sick was the rum. Needless to say I will NEVER!!!! MAKE THIS AGAIN, wait let me be fair I would never make this again with out cutting the rum down to maybe a capful for the glaze, that is if I can think about rum cake without feeling sick, because right now I can't. I am so sorry to be so blunt, but this was my true experience. Thanks anyway for the recipe 3/21/07 UPDATE!!!!. I TOOK THIS CAKE TO WORK AND LET ME SAY EVERYONE LOVED IT, ONE GUY OFFERED ME MONEY TO MAKE HIM ONE. I GUESS IT'S A MATTER OF TASTE. THOUGH SOME DID THINK I HAD USED A WHOLE BOTTLE OF RUM, THEY STILL SAID IT WAS GOOD. OH WELL!!!!.

Tortilla Pizzas

You can fix these any way you like, Instead of mayo I used land of lakes roasted garlic butter spread. I spread a little evoo on pan sprinkle a little garlic powder, the I laid my tortilla over oil, I brush my shell with the garlic butter, sprinkle my parma cheese over then I topped with cheese and different topping that everyone wanted, some wanted shrimp and mushrooms, others pepperoni and mushrooms, onions, peppers ect, ect, on some instead of the mayo or garlic butter I used a basil garlic orega tomatoe sauce then toppings, I really mixed it up. I did use fresh basil instead of dried on all pizzas and on some I used a six cheese italian blend. Just mix it up some, it's all good!!! 5 stars

Jerk Seasoning

This was good but nothing like I had in Jamaica, I also felt that it was a little dry. The taste was good, the heat factor was ok, I did add a little more cayenne than called for, I grilled mine on chicken over coals and wood using indirect heat to keep from burning. Not sure I will use again with out figuring out how to keep it from being so dry.

Grilled Marinated Shrimp

I grilled these last night and they came out great, I did not have any tomatoe paste, but they sitll were very good, also I added some white wine to the marinade, that made it taste very elegant. 5 stars!!!!.

Spaghetti Sauce III

This is a great sauce, I did add my little changes though, I started by roasting my roma tomatoes and my fresh bulb of garlic with a drizzle of evoo. While that was going I started browning my ground beef and sweet italian sausage with my chopped onion and basil, italian seasoning, red peppers and seasoning salt. Then I cooked my fresh mushrooms in white wine until wine reduced by two teaspoons. When my tomatoes and garlic were ready, I put them in electric chopper with a little wine, basil, oregano, italian seasoning , tomatoe paste, and water. Then I added the tomatoe mixture to my meat that I had drained of fat. I added my mushrooms and fresh parsley and parm cheese. I let it simmer for 1 1/2 hrs stirring every 15min or so. Then I poured over my pasta Top my dish with a little jack and parma cheese and fresh black pepper and garlic seasoning blend. Made garlic cheese bread Then we threw down eating this one up!!!!!.

Baked Stuffed Shrimp

Very good I used minced onions, green onions (tops only), fresh garlic, fresh bread crumbs, mayo, evoo, fresh parsley, jack cheese, lobster meat, parma cheese, cayenne pepper, seasoning salt and fresh ground peppercorn and garlic seasoning. I left out the cackers and the worcestershire. The shrimp came out very pretty looking and they tasted great.

Simple Mexican Rice

This was very good rice really close to the resturants. I almost ruin mine by trying to cook it on the stove top, other reviewers stated they had done this, did not work for me, my rice started to stick and burn, I quickly remove from stove top, put in oven dish and cooked it that way, it did come out a little over cooked, but that was my fault, it still had that mexican red rice flavor that you get at mexican resturants. As far as the rest of the recipe I followed it exactly. I served with cheese enchiladas and a red chile sauce

Malaysian Barbecue Chicken Wings

This was just ok for me, I must admit I did change the ingredients some and maybe that's why, It's worth a shot to try and make again following the recipe. I used soy sauce, oyster sauce fresh garlic, onion powder, curry powder and ground pepper, no sesame oil or basil even though I had both, I did let it marinate overnight. I grilled over charcoal, I still felt like something was missing. I did'nt use the sesame oil because I'm not a big fan. Oh well maybe next time.
