Peppermint Meringues

This is a great recipe, but I just had to clarify one of the suggestions made by another reviewer. Meringue CANNOT be made with Splenda. It won't set correctly and will be a waste of your time, promise.

Heather's Cilantro, Black Bean, and Corn Salsa

This recipe is similar to my original corn & black bean salsa, except I used fresh tomatoes. HOWEVER, I finally wisened up and found a short cut - fresh pico de gallo from the grocery store produce section, canned corn & black beans drained. The only things you have to cut are the avocado and slice the lime in half. Cuts prep time tremendiously!

Sangria! Sangria!

I've used this recipe several times over the past few years, but I realized this last time I've never rated it! It's so good I never have enough! For our wedding reception/housewarming, I made 4 batches and filled our pretty glass bev dispenser... it was gone in an hour flat!! Make WAYYY more than you think you'll need, I'm planning on 8 batches for our next party.

Broccoli Chicken Fettuccini Alfredo

I'll stick to my old fashioned sauce of 1 stick butter, 1 pint heavy cream and 1 cup parmesan cheese and just add broccoli to that.

Margaritas

This is very similar to my gpa's recipe that was a family Christmas tradition. He had a great way of measuring, 1 can limeade, 1/2 can tequila, 1/3 can triple sec. Add a splash of orange juice and half a lime, rind and all in the blender, and it brings back all those Christmas celebrations with him!

Chicken Breasts Stuffed with Crabmeat

Tomato and Mozzarella Bites

I loved these, but we edited the recipe and didn't use the balsamic. Used marinated mozz balls and s&p. That's all they needed. It was so easy to assemble, and they looked really pretty piled on the platter. Perfect little appetizer.

Parmesan Tomatoes

I just halved the tomatoes and pulled out the pulp. Used light mayo, used all dried herbs and added basil. Also, I just put them under the broiler instead of baking. The next time I might add some bread crumbs to the top along with the mozz

Slow Cooker Apple Butter

I'd never had apple butter before so this was a very pleasant surprise. It was sooo easy! I used the splenda blend brown sugar and cut the entire amount of added sugar. It was still plenty sweet and delicious. Also, since I've never had apple butter, I wasn't sure, is it supposed to be completely smooth or not? Mine wasn't so I put it in the blender before canning it up. I'm having it this morning over yogurt. Thank you!!!

Creole Seasoning Blend

A great base recipe for a seasoning I use on so many things! I will cut back on the salt next time, or leave it out completely so I can adjust the amt depending on what I am cooking. You can also use this as a blackened seasoning by adding a little sugar and nutmeg to it!

Sweet Banana Bread

I can't leave well enough alone, so I made several changes right off the bat: I had instant pudding, so used that, only had 2/3 cup of smashed banana, so substituted PB for the remainder of the banana. I replaced 3/4 cup of regular flour for WW flour and used splenda 50/50 blend. Because of the WW flour, I had to add extra milk. It turned out really good, and I'm sorry I'm not rating the original recipe, but hope that someone can use some of my changes. It's a great base recipe. Be creative people!

CCRyder's Smoker Rib Rub

Tried this past weekend. It was very good, but I think that the sugars may have lead to a faint burnt flavor in the ribs. I'm not really complaining as between 3 people 2 whole racks of ribs were devoured. I smoked mine for 2 hours with indirect heat and hickory wood chips soaked in half beer half water and glazed them the last 20 minutes.

Fresh Broccoli Salad

Fra Diavolo Sauce With Pasta

Homemade Pancake Mix

Very good mix, and easy. But I think as written, the pancakes are a little too thick, so I add about another 1/4 cup of milk to make mine thinner. i also add a little cinnamon to the mix. Yum!

Basic Chicken Stock

I love the instructions on clarifying! Thank you! I also add bay leaf, nix the cloves and add peppercorns. Also, I used the carcass of a rotisserie chicken from the grocery store that we had for supper the night before. Now I feel proud of myself for being so thrifty :)

Cajun Chicken and Sausage Gumbo

I made this gumbo tonight, bu I made the roux this morning before work to speed things along. It took me about 30 min to achieve milk choc. color instead of 10. *TIP - after sitting in the fridge, the excess oil in my roux floated to the top and I was able to skim it off, so I think you could use less than 1 cup of oil to begin with! Other than that the only change was that I only cooked the whole thing 1 hr. instead of 2. I had a couple bottles of hot sauce at the table so we could adjust the heat to our individual tastes. Delish!

Slow Cooker Beef Stroganoff I

Only 3 stars (or less) as written... I've never seen or heard of golden mushroom soup, so I found a brand that makes a roasted garlic mushroom soup, so I used that. When I began adding the cream cheese and first tasted it (I had only added about a 1/3 of the called for amt) it tasted awful! I stopped putting cream cheese in, luckily I had sour cream to replace it with! Also, was missing a real beefy flavor so I added a pkt of beefy onion soup mix and some beef boullion dissolved in water and corn starch, because it was really runny. I hope this helps someone get this recipe right!

Crab Salad

We doubled this recipe and served it as one of our cocktail wedding reception / housewarming party appetizers. It went over really well and looked great in a pedestal bowl on a platter of crackers. Sprinkled with chopped green onion to dress it up a bit. (Almost forgot! We used 1/2 real crab meat and 1/2 fake and it was still good and cost less!)
