Balsamic Chicken and Fresh Mozzarella

only ok. I was expecting more flavor, there are so many factors that could have contributed to this... the dressing I used, the green house tomatoes, or the fresh mozzarella which tasted like the water it came in.

Deb's Cranchick Salad

Man, this is the best chicken salad I have ever made! Thank you so much for sharing! I didn't have any balsamic vinegar (which could have made this even better!) so I substituted red wine vinegar and about 1/2 tsp of sugar. YUM! UPDATE: I made this again and used the balsalmic vinegar and it did turn a funny color. It tasted awesome, but for better presentation I think I'll try finding the white balsalmic other reviews mentioned.

Brian's Easy Stuffed Flounder

I went floundering for the first time and had to figure out what to do with my beautiful fish. I used fresh crab meat instead of the canned crab and shrimp. This was just kinda bland. Not impressed.

Mrs Espy's Enchilada Sauce

Great Stuff and so easy to adjust once you have a basic recipe! I did end up adding some cornstarch in cool water towards the end because it wasn't quite thick enough. My BF was so happy because enchiladas are his all time fav and he said these were just as good as the restaurant. Overall very pleased :)

Maria's Stuffed Chicken Breasts

So good! And happily, I too had left over stuffing and sauce and extra large pasta shells. Two great meals in one :) I buy my chicken breasts frozen, so when I thaw them out, I always put some Italian or Greek salad dressing in a ziploc bag with them, marinade and thaw at the same time.

Scallops with White Wine Sauce I

My bf is the pickiest eater I have ever met. I made this for us on V-day and he loved it so much he was taking pictures of it with his phone and sending it to people while using bread to soak up the leftover sauce in the pan. :) I broiled 2 filet mignon for us and like in the picture, I put the scallops on top and covered it in the sauce. Delicious! Update: I tried to use half & half instead of the cream and it was a disaster! The sauce broke and was a grain-y unattractive mess. You MUST use heavy cream!

Peppermint Meringues

This is a great recipe, but I just had to clarify one of the suggestions made by another reviewer. Meringue CANNOT be made with Splenda. It won't set correctly and will be a waste of your time, promise.
