Crab Quiche I

This was super easy to make and with some minor adjustments was fantastic tasting. I used the Sargento Artisan Blend Cheese: Wisconsin and Vermont Cheddar with Bacon (1 3/4 cup), 1 teaspoon hot sauce, 1 teaspoon old bay, 3 eggs, 2 cloves chopped garlic and 2 6oz cans Chicken of the Sea White crab meat. I did make mine with the pie crust. This really was a great way to start a long day :-)

Super Sausage Gravy

I made a few changes: I used gimme lean sausage (veggie) 3 cups of skim milk and 1/2 cup of flour. Because there is no fat in the sausage I poured 2TBS over the "meat" when browned and crumbled and mixed all through then added the flour and mixed until disolved, then gradually added the milk until I was at the desired thickness. I did use all the milk. I added a pinch of cayenne pepper, pinch of coarse salt and a little dried thyme as well. Tasted very good for a lower fat version and makes a ton so the 28 grams of fat added from the olive oil will definitely not hurt anyone.....I can probably get 8-10 serving out of the amount made!!!! I served on top of Pillsbury Low Fat Wheat Biscuits. In case you can not tell I have a degree in nutrition and try to make things healthier when I can....this one comes out pretty darn close to the original :-)

Slow Cooker Chicken and Dumplings

I thought this was amazing. I did make a few changes though: Used chicken broth instead of water, one can of cream of celery, one can of cream of chicken, I added 2 tablespoons of "poultry" blend fresh herbs, I also finely diced up 4 celery ribs (leaves and all) and I used one can of Pillsbury Grand Biscuits cut into 4ths (ended up with 32 little pieces.) I did season my chicken breasts with salt and pepper too. I took the chicken out at 3hours and shredded the chicken, added it back to the liquid and added the biscuit pieces. Total time was 5 hours. It took about a 1/2 hour to shred the chicken and 1.5 to finish the dumplings. Hope this helps everyone out.

Artichoke Chicken

This was so good! I did make a few changes: I was cooking for 6 and used 8oz fat free sour cream, 1/2c light Hellmans mayo, 1c shredded parm. I also sauteed in 1 Tbs. butter: 3 large garlic cloves (minced) with an 8oz jar of mushrooms (drained and chopped.) I let the mushroom mixture cool and then mixed the ingredients as in recipe. I did use marinated artichokes as others suggested. I also sprinkled a little Italian Bread Crumbs over the top and then sprayed with Butter cooking spray to get it to "crisp the top" I baked mine for 40 minutes in a 375 oven. I served the chicken on top of whole wheat egg noodles. Juicey, left overs!!!!

Addictive Pumpkin Muffins

These were amazing! Addictive they are...I have a busy schedule and was able to make these in no time. Recipe was easy to cut in 1/2 too. I made them with Splenda for Baking, regular applsauce, craisins instead of raisins and pecans instead of walnuts. They came out great. Stuck a little to paper time I will spray a muffin tin or even spray the liners with a little Butter Flavored Pam. Making again in a couple of days for my Aerobic Classes I teach the week of Halloween.

Zippy Egg Casserole

This was a fabulous casserole. My roommate hates new things and is a very picky breakfast person...SHE LOVED IT!! I used a few healthy alternatives: I used 2c. red-fat swiss and 2c. red-fat cheddar in place of the cheeses listed, I used Fat-Free half/half, 2% milk and I also used red-fat pork sausage and 2c. of Southwestern Egg Beaters instead of the 8 eggs. I layered it all the same and left in fridge from 2pm-7am the next day and it was GREAT!!! Best breakfast casserole I have ever had!
