Country Apple Dumplings

I love this because it's so fast and delicious. I halved the recipe and then halved the sauce. I sprinkle cinnamon sugar on the crescent triangles before rolling as well, then I brush the rolls with the butter mixture and pour the rest over. I have used lemon-lime soda, but since I have stopped drinking pop, I use orange juice and I like it better. Thanks for a great recipe.

Shrimp and Feta Cheese Pasta

To make this even easier, I used two cans of italian diced tomatoes. Have tried fire-roasted tomatoes w/ great results. I also up the wine to 1/2 cup and use a little more feta. Very good..will make again!

Strawberry and Feta Salad

This was very good! I had some raspberry jam I needed to use up, so I used that in place of the raspberry vinegar. I also used a big clove of garlic which was very overpowering and made the dressing somewhat spicy. Next time, I will use a smaller clove or garlic powder/salt. I will also serve the strawberries on the side as they got soggy.

Beer Batter Fish Made Great

Fish Tacos

These were very good! Definitely needs the sauce which is delicious)as the battered/fried fish alone was pretty basic. Only change I made was to add a little cilantro to the sauce as I have a ton I need to use up. Will make again.

Szechwan Shrimp

Used 1 lb. of shrimp, added fresh broccoli/carrots, frozen peas and cashews. Used fresh ginger instead of ground. Tripled the sauce and it was the perfect amount. Heat level was just right .. my 8-yr-old son ate it up w/ no complaints. Will make again!

Whit's Chicken Enchiladas

Made this the first time exactly as the recipe states and it was wonderful. Second time, I shredded a rotisserie chicken, added half a can of enchilada sauce and added a little taco seasoning. Just a little more wonderful. Third time, added a little salsa to the cheese mix and added some enchildad sauce to the cream. Fourth time, I went back to the original recipe. Love these and will continue to make. Always use chicken broth in place of water.

Broccoli Chicken Casserole I

Easy and tastes good! I added an extra can of cream of mushroom soup, some onion powder, and about 8 oz. of sliced mushrooms. Didn't layer (just mixed everything together in a big bowl) and placed in the pan and topped with cheese and a 1/2 package of stuffing for chicken. Will make again!

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

4 stars b/c I loved the flavor/texture of the fish and the taste of the chipotle mayo, but not the slaw. I especially enjoyed the fish (so simple and delicious) and will be making it alone for future meals.

Garlic Red Potatoes

Great recipe! They are just like the ones at a favorite restaurant of mine! Followed the recipe exactly and they turn out great everytime! I will try the suggestion of putting the potatoes into a bag rather than pouring the butter mixture over. I think this will work much better. Thank you for a great recipe!

Chicken Cordon Bleu II

Loved this! Had it at a friend's dinner, and had to try it at home! Used turkey ham instead (don't eat pork), but otherwise followed the recipe exactly. My girlfriend made it for a date and she called it her "go get him" dinner! Thanks for a great recipe!

Spinach Tortellini Soup

Tastes great, very budget friendly, and quick/easy to make! I used a 10 oz. bag of fresh spinach (on sale for $1), a 19 oz. bag of tortellini ($1), and 4 cans of chcken broth (about $4 - 2 regular, and 2 low sodium, that was all I had on hand). $6 total for a huge pot of soup! I added a little onion powder and a splash of lemon juice. Next time I will try shredded chicken or mini meatballs (from the Mama's Italian Wedding Soup recipe on this site). I also sprinkled a little parmesan cheese on top of each serving.

Easy Quiche

Have never made quiche until now! I loved this! It was so easy too - I had my 4 year old son help me! I was planning to follow this recipe exactly, but I ended up having more broccoli (14 oz. bag) and more ham (about 1 1/2 to 2 cups diced), so I added one more egg. It seemed like a lot , so I put it in a 13x9 dish, which ended up being perfect size! It turned out great! I will definitely be making this again and will be playing around with different add-ins. I forgot this time, but next time I will season with a little S/P.
