Beef and Parmesan Pasta

This was a pretty good staple and alternative to spaghetti. I didn't have zucchini on hand, so didn't use it. And I added onions, garlic, salt, Italian spice, and some Ragu to the mix. Like others had noticed, I did need to add more water as the pasta cooked. But my husband and kids liked it. The picky eater didn't eat the meat, but picked out the noodles. I served it with garlic bread. Will make it again!

Muddy Chocolate Cheese Cake

My daughter and her friend chose this recipe and proceeded to make it without reading the reviews. All I can say is: USE A BIGGER PAN! We followed the directions and tried to make it work with the 9" pan called for in the recipe. Much too small - it overflowed, there was not enough room for the cheesecake mixture, or the extra chocolate. We had to throw the mess away - waste of money! We should have read the reviews first :)

Chocolate and Fruit Trifle

I made this in parfait glasses with blackberries, raspberries, and bananas. And I had a box of devil's food cupcake mix so I used that for the cake. When the cupcakes were done, I crumbled the moist bottoms for the cake layers. The tops were perfect as "lids" on top the glasses. Everything made 12 parfaits with no leftovers. Excellent, although my daughter didn't like the bananas.

Blissful Rosemary Chicken

This was great! I browned the chicken first as others recommended and used bamboo skewers to hold chicken together (rosemary inside.) Very moist and flavorful with the proscuitto & fontina! One thing I'll do different next time is reduce the amount of pepper. Family loved it -- even chicken-hating daughter :)

Double Chocolate Mocha Trifle

I made a variation of this recipe and included some changes that other reviewers made. That said, it really isn't the same recipe, but trifle nonetheless. I didn't have time to make brownies or cake, so I bought chocolate and marble loaf cake, which is moist and cubes beautifully. Instead of pudding with the whipped cream (I used 2 cups real whipping cream), I folded in cream cheese (8 oz), 1 tsp vanilla and 1/2 cup sugar, along with 2 cups mini marshmallows. My layers were: loaf cake squares, caramel sauce, crushed Heath Bars, whipped cream/cream cheese mixture, raspberry pie filling with some fresh raspberries thrown in to add some tartness to all that sugar! I brought it to a potluck and it was gone before my husband could taste it! My daughter and her friends said it was awesome. I think this is one recipe where you can get creative and still have it come out tasty.

Spooky Witches' Fingers

I made this to bring to a party where the hostess requested "finger foods" - ha, ha! I stuck a thin stick pretzel in the middle to simulate a "bone." I added a dash of cinnamon to the dough, and they came out looking great, and tasting yummy as well. For presentation, I stuck them into a (store bought) chocolate cream pie. Then people could use a finger to scoop out the chocolatty cream filling. excellent! One thing to note: these were fairly time consuming in my world where I procrastinate, so allow yourself time (not just one hour) before the event to shape the fingers:)
