Pineapple Zucchini Muffins

Second time making this and still wonderful! I only used 1 cup oil, coarsely chopped pineapple chunks and defrosted a 4-cup bag of shredded zucchini. I added 1tsp ginger and 1/4 tsp nutmeg. Very light and moist! I froze half of the first batch and we gobbled the last of them yesterday. Freeze well, portable and healthy snack/breakfast!

Topless Blueberry Pie

Excellent! I also modified the liquid to 1/4 cup lemon juice and 3/4 cup water, decreased cornstarch to 2 1/2 Tbs and added ginger and cinnamon (1/4 tsp each). I loved that the oven was only on to bake the crust. I'm going to use this recipe for all my fruit pies. I received rave reviews from 'professional' pie eaters!

Swedish Meatballs (Svenska Kottbullar)

My husband made this with ground venison and only used a 1/3 of a container (all we had left). It was fantastic! Our picky kids had multiple helpings. Definitely a guest-worthy meal! Thank you!

Ukha (Russian Fish Soup)

Wow! Who would have guessed this could taste so good with such simple ingredients! I added peppercorns to the water, halved the onlon, added a bay leaf and doubled the fish (wild perch). My husband finished it off and he doesn't like fish. Thanks, Byakin!

Garden Fresh Tomato Soup

Awesome! Increased this for 18 servings. Used can of crushed tomatoes (6lb 6oz) and can of chicken broth (3lb, 1.5 oz), 2 onions, 8 cloves garlic, 2 Tbs sugar, 2 Tbs balsalmic vinegar, 1 Tbs salt, 1 Tbs oregano. 1/4 cup and 2 Tbs butter adn same amount of flour. Ran it through the food mill and my toddlers gobbled it. We'll see how everyone else likes it tomorrow.

Whole Grain Waffles

I can't believe how healthy and delicious these are! I used canned pumpkin to replace the applesauce and oil, 5 grain cereal to replace the flax meal and whole wheat flour instead of the pastry flour. My family gobbled them up and I can never get them to eat 5 grain cereal! Hooray! Thank you!!

Easy Apple-Carrot Coleslaw

Hooray! This recipe is a keeper! I used half a medium cabbage, sliced fine, in place of the coleslaw mix and red cabbage. I kept everything else the same and my 2yr old gobbled up a half cup of the mix before it hit the table. It's perfect; sweet, tangy, crunchy and HEALTHY! Thank you, Carolyn!

Chicken Saag

Awesome flavors! I modified it a bit in the interest of time by using a store-bought rotisserie chicken and my electric pressure cooker. I only used one bag of pre-washed spinach and used 5 tsp of a garlic ginger paste that I keep in the fridge. I chopped the chicken and ended up with about 2 cups, which I added to the sauce and cooked on low pressure for 5 min. The chicken fell apart and blended well. After adding the spinach, I cooked it on low pressure for 8 min. Lastly, I only used 1/8 tsp of cayenne since I was feeding toddlers. Really, really good over basmati rice. Thank you!

Steak 'N' Onion Pie

Great way to use up leftover steak! I did the flour mix and added it to the cooked steak and onion slices. Used chicken broth and added a carrot and celery stalk, which I parboiled with the potato. Also used all butter. Delicious! Will definitely turn to this recipe again when I want to use up food in the fridge.

Chicken Coconut Curry

This was fantastic! I browned the carrots, celery and onions in my electric pressure cooker then added the rest per the recipe. The biggest difference was that I used the remains of a rotisserie chicken (sans skin). I cooked it on high pressure for 5 min and served it over jasmine rice. It was delicious although a little too spicy for my toddlers. I also added about 3/4 plain yogurt just before serving. I used chicken curry masala for the curry. Next time I may just use one tablespoon. Nuts would be great in this, too!

Baked Fish and Rice

This was great! I went heavy on the spices, turmeric, basil, oregano, season salt, onion powder and garlic powder. Before adding the fish I dredged the fillets in a mix of 2 Tbsp flour, dill, season salt, onion powder and garlic powder. My picky toddler ate it all. A keeper!

Zucchini and Pork Soup

Wow, Delicious! I made a slew of modifications, but only because I didn't have everything on hand. I didn't have pork chops, diced tomatoes, chicken broth or oyster sauce. I subbed in 32oz no sodium beef broth, 4 chicken bouillon cubes and 1/4 cup tomato paste. Fantastic recipe!

California Roll Salad

I still can't believe how good this was! I cooked 1 cup rice in the pressure cooker with 1 and half cups water. After it cooled slightly, I added a generous tablespoon of rice vinegar. I didn't have lettuce, avocado or crabmeat so I used a 7oz can of skinless, boneless salmon, one carrot grated and one cucumber. The dressing really was phenomenal. I added a little ginger powder to the rice and dressing and reduced the wasabi powder to 1 tsp (for my toddlers). I had 4 sheets of nori left over so I tore it up and mixed it in. This was fast easy and inexpensive since I was using up stuff. Next time I make this I'll add toasted sesame seeds. Thank you for a great recipe to build upon!

Salmon with Spinach Sauce

Thanks for a great pressure cooker recipe! I modified it slightly by using 1/2 cup lowfat plain yogurt and 1/4 cup mayo. I only used one big fillet and I was disappointed I didn't have more. My husband who doesn't like spinach ate it all.

Mild Cheesy Chicken Enchiladas

Great recipe! I needed something with the ingredients on hand. Instead of chicken I used the leftovers from the pressure cooker carnitas on this site. I used the leftover sour cream/cream cheese mix from the seven layer dip recipe (also on this site). I used corn tortillas instead and provided jalapeno peppers for individual plates because the dish was a little milder than I like. I'll try salsa in lieu of tomatoes next time... and there will be many more times. Thanks for a great recipe!

Pressure Cooker Carnitas

I only had pickled jalapenos so I added a 1/4 cup of them, 1 tsp cumin and 2 tsp coriander. Other than those changes I followed the recipe. Fantastic! I was worried it would be too spicy for my toddler, but he loved it. I served it over brown rice. Tonight I'll use the leftovers to make enchiladas. Thank you for a great pork recipe!

Big Al's K.C. Bar-B-Q Sauce

WOW! I wanted a basic barbeque sauce because I am sick of the high fructose corn syrup in all the store brands. This recipe blew me away. I followed it exactly and really only had to buy liquid smoke to make it. Totally worth it and very easy! Thanks, Big Al!
