Pumpkin Pancakes
This was my first time making home made pancakes without a box mix. WOW. These are absolutely delicious!!! They are light, fluffy, and hearty all at once!!! I made some changes since I didn't have all the ingredients. I didn't have milk so I used 1 cup buttermilk and half a cup of evaporated milk. I only used 1 Tbsp vinegar since I used buttermilk. I also added an additional tbsp of brown sugar, 1 tbsp white sugar, nutmeg, clove and pumpkin pie spice. These seriously taste like the consistency of IHOP pancakes which are my favorite!!! I was going to attempt a cream cheese glaze but decided to stick with IHOP syrup (which can be found at're welcome)

Mandarin Orange Cake I
This is the best cake ever!!! I took someone else's advice by adding more oranges and like 2-3 tablespoons of orange extract. I kept tasting the batter until I could actually taste the orange flavor. I made this into an 8" round icecream cake using bluebell vanilla ice cream as the middle layer. And as someone else mentioned, I couldn't stop eating the pineapple frosting! This cake is phenomenal!!!

Brooke's Best Bombshell Brownies
This was my first time to make home-made brownies. They came out PERFECT and look just like the picture! I love chewy, fudgey brownies with flaky top and these were just that. I was a little nervous because I didn't have eggs, only egg beaters. I used 1 cup of egg beaters and they worked just as well. I baked for 35 minutes and although the knife wasn't completely dry when I pulled it out, I knew they would continue baking a little in the pan. I'm glad I did not bake them any longer. They were perfect!!! Everyone who tried them loved them.
