Zucchini Coconut Loaf

This is indeed a fantastic recipe. I took another reviewer's advice and used half white sugar, half brown sugar, and I think it came out nicely. I will definitely be using this recipe agian and again! Cheers!

Hearty Vegetable Soup

I made this for our dinner tonight, complete with cornbread. I found that, to my taste, the soup was rather bland, so I added a bit of sea salt, and used more garlic salt. I used only one can of beans, and added asparagus. Someone else said it before, but I'll say it again: you can add virtually any vegetableto this soup, or substitute nearly anything, and it seems fine. When I repeat this recipe, I think I'll omit the stewed tomatoes, as it does seem a bit Tomato Empowered. Also, I noticed that my peas virtually disintigrate: I will experiment with frozen peas/corn next time, for both consistency and flavor (canned veggies just don't do it for me! Of course, if I'm making this during the summer, I'll use fresh., and don't know why I didn't use fresh in the first place, to be honest...) This is a lovely recipe to use up leftover veggetables in one's fridgedaire...

Angel Hair Pasta with Pignoli

Orange Glazed Swordfish

This was a perfect summer dish: I used only half the soy sauce (per others' suggestions), and grilled the fish with a slice of orange on top. The fish was juicy and tender, though not overpowered by the sesame and soy, and my guests loved it. I'm sure I will make this again and again. (served with grilled asparagus and finished with a salad of edible flowers, this was a light and tasty meal)

Mushrooms in White Wine Sauce

I can't believe that this recipe isn't used OVER something like a pasta. It's SO rich. I made it exactly according to the recipe: but was using it as a sauce for linguine, and it was STILL too rich. I like the flavours, but I feel they need to be spread out a bit more than this recipe allows. I would say this recipe feeds 8, with pasta, at least. I would also use the veg oil instead of peanut oil: peanut oil adds too much extra flavouring... my $.02

Easy One Skillet Stroganoff

this was SO good! I added a little chili powder and a little cumin, just for a TEENSY bit of a lil extra something... so incredibly easy! I love that it only takes one skillet... wow. I can't say enough. This will become a staple in my cooking repetoire...

Best Ever Butter Cream Frosting

this was great! I'd never made frosting before, and was ready to give up on it, thinking that I'd done something wrong, because it was looking curdled all the while I was beating it, but then, like magic, *poof*... it became thick and creamy. Glad I waited those extra two minutes!

Twice-Cooked Coconut Shrimp
