Homemade Flour Tortillas

Reviewed: Apr. 8, 2014
These turned out terrific. At the suggestion of others, rolled the dough into balls and let them rest until a damp cloth for 15 minutes. Rolled into rounds turning 90 degrees each pass to get a more circular shape (we need to practice) it's important for the griddle to be really hot to get the nice freckled toasted spots. If you don't have a tortilla warmer, you can wrap the cooked tortillas in a moist cloth while you cook the others.

Amazingly Easy Irish Soda Bread

Reviewed: Mar. 19, 2012
Was wonderful. Used our kitchen-aide stand up mixer - so easy. Cooked it in a greased cast-iron skillet. We did find that we needed a little more buttermilk in order to get the dough to hold together. A keeper. Will make it again.

Yeast Waffles

Reviewed: Jul. 28, 2011
Awesome. Came out great even though we only let the batter rise for a few hours instead of all night. Delicious. Recipe going in the file for another day.

Ghirardelli® Ultimate Chocolate Fondue

Reviewed: Dec. 31, 2010
Best fondue we've tried after many recipes. I could only find semi-sweet Ghirardelli chocolate chips so used those along with the Ghirardelli Milk Chocolate baking bar. At the recommendation of other reviews, I started with 1/2 the cream and then added a bit more until I reached the desired thickness. Delicious. Definitely will be making this again!

Easy Pumpkin Muffins

Reviewed: Oct. 29, 2009
We love this recipe! Have made it numerous times, exactly as written. So easy and delicious! My kids eat them up and ask for more. Sometimes we sprinkle the top with brown sugar or streusel topping before we cook them.

Paul's Pumpkin Bars

Reviewed: May 26, 2008
Not really a bar more of a cake but DELICIOUS anyway. I did modify as per suggested with 3 eggs instead of 4 and 30 ounces of Libby's pumbkin pie filling instead of the puree and I also used pumpkin pie spice. Wow these were good. Glad we had to take them to a potluck or we would have eating the whole pan.

Broiled Tilapia Parmesan

Reviewed: Mar. 13, 2008
My family raved about this and requested I make it again and soon! I reduced the amount of butter and added some bread crumbs as some has suggested. I didn't have celery salt and so used onion salt instead. Fast, easy, delicious. Will definitely be making this again.

Maple Salmon

Reviewed: Feb. 1, 2008
This is the 2nd time I've tried this recipe. This time I tried grilling it and it came out FANTASTIC! I don't like garlic salt so I used two garlic cloves pressed and 1/4 t. salt instead. I poured the marinate and boiled it down with a little white whine for sauce. Wow was it good. If you can, try grilling it instead.

Creamy Veggie Fondue

Reviewed: Dec. 25, 2007
We omitted thenions and made this a traditional cheese fondue. I followed the advice of others and added the milk last. I had chicken stock and more white wine on hand to thin it if necessary which is was. I added a little lemon juice to help with the cheese getting too stringy. We only used 1/2 the cayenne and instead of using garlic powder I just rubbed the instead of the pot with a crushed garlic clove. My family loved it. Of the fondues we have tried in the past, my husband says this is his favorite.

Pumpkin Pancakes

Reviewed: Dec. 3, 2007
I did have the ingredients to make the syrup but the pancakes turned out great! I doubled the recipe and added 1/2 t. of ground cloves, 1/2 t. ground ginger, 1/2 t. ground nutmeg. We called the pumpkin pie pancakes. They didn't even need syrup although next time I'm making that too. Delicious.

These were wonderful. After the chops had simmered, I added a little cornstarch and water to the sauce and let it simmer a minute or two longer to thicken. Delicious.

Slow Cooker Turkey Breast

Reviewed: Feb. 13, 2007
This was so easy and turned out delicious! I used one split boneless, skinless turkey breast. I laid it on a bed of onions & carrots and I added just a 1/4 cup water at the beginning. I cooked it on high for 2 hours and then 2 more hours on low and that was it. There were plenty of drippings to make delicous gravy. Wonderful! Will definitely make it again.

Posse Stew

Reviewed: Oct. 19, 2006
Really liked this. Made it for a bean bake-off at church and it was popular. We let it simmer longer - the flavors blend better and the beef ends up more tender. When I make it again (and I will) I use more corn.

Banana Banana Bread

Reviewed: Sep. 2, 2006
This was yummy! It was a great recipe to use up all the over-ripe bananas I had waiting in the freezer. I followed the advice of others and added vanilla and cinnamon. And I spread it into my 9 inch cast iron skittle and then served it in wedges. It was moist and wonderful!
