Amish White Bread

I make two loaves every Saturday. I use the whole amount of sugar and at other times I cut it by half and it still is great. I use my kitchen Aide mixer to make this bread. The bread freezes very well. I give away the extra loaf often and everyone loves it.

Broccoli Frittata

Use only 1/2 of the green pepper suggested, way too much. I added an extra egg. This is a basic frittata and 3 cups of any sort of veggy or meat could be added in place of the pepper and broccoli. Good directions on how to prepare a frittata and length of cookin time. I will make this in the future.

Whole Wheat Blueberry Pancakes

Very easy and basic. My kids loved them and did not miss the white flour. I did not use blueberries, instead I dropped in some chochlate chips after I put them on my griddle and before I flipped them. I doubled the recipe and froze the rest. The leftovers heated up well from the freezer.

Grilled Salmon I

Great taste. Wonderful. Sear the non scale side first, then turn. It locks in the taste. Cook longer on scale side down and tent with a piece of foil to complete cooking time. The foil tent insures it is done and helps it stay moist. When I removed it from large grill pan on top of my stove the scale side stayed on the grill pan the the fish was removed easily. Looked like something from an upscale resturant.

Baked Pork Chimichangas

Excellent. Very economical, makes a lot. I made a few chages, but it was a great recipe. I used 10 inch tortillas. I used one can of pinto beans drained and put that over the meat with the other ingredients. I cooked as directed and added the broth and cooked 1 hour longer. I used a 2.5 lb pork loin. I shredded one-half of it and added it back to the beans,filled tortillas and baked. I am going to use the other half of the meat for pork barbaque sandwiches - look out - this meat is meant for dual purposes. Using one-half of the meat with the can of beans gave me enough to fill 16 - ten inch tortillas. thanks for sharing your recipe.

Roast Sticky Chicken-Rotisserie Style

Great chick. I used a 6.5 lb chicken and it was up to 170 degrees(180 when you cover chicken for 30 minutes after you remove it from the oven)when I cooked it for 5 hours. I will add extra garlic season next time. Chick sat with seasoning on for 4 hours before I put it in the oven. Wonderful.

Downeast Maine Pumpkin Bread

Excellent and easy. I subsituted 1/2 cup unsweetened applesauce for 1/2 cup of the oil. I only added 1/2 cup oil. I used 2 cups of sugar instead of 3. I added 1/2 tsp of Pumpkin pie spice in addition to the other spices. Wonderful bread.

Broccoli Cheese Soup

Great recipe. It is a staple. Only addition I make is I add 4 cups of frozen mixed vegtables when I add the broccoli. I also use broccoli florets.

Chicken Fettuccini Alfredo

my new alfredo recipe! The only changes I made was I grilled my chicken with a ready made seasoning rub outside and I left out the tomatoes at the end. I use fat free half and half and never miss the calories. The cheeses are perfect in this recipe.

Honey Roasted Red Potatoes

These burn very easy due to the honey. They would be much better to roast them on broil for 15 minutes and then drizzle them with the sauce. I will do this next time.

Yummy Bok Choy Salad

Great salad. I use Romane Lettuce (2 bunches) and celery or spinach instead. It is easier for my small kids to eat. Great dressing. this is awesome with any Asian foods

Barbequed Marinated Flank Steak

Awesome!! Don't change a thing!! Make sure that you cut your meat in thin slices after you grill it. Let meat rest at least 10 minutes. That is the trick with flank steak, thin slices that are against the grain. My 1 and 2 year old could eat this meat it was so tender.

Best Hamburger Ever

This recipe lives up to it's name!! I made 5 burgers NOT 4.I may never make regular hamburgers again. I did leave out the chopped onion in fear it would make the burger fall apart, I used a teaspoon not tablespoon of garlic powder (too much garlic powder when you put it with a garlic clove too) and I cut the rosemary spice in half. I will make these same changes next time. EXCELLENT - the burgers were great looking.

Scalloped Potatoes I

My family likes scalloped potatoes from scratch, but when I tried this they really liked them. The taste is great and creamy. I put little dabs of butter on top before baking. If you want, it works to cook this at 350 for one hour. Your meatloaf and potatoes are done at the same time.
