Mom's Zucchini Bread

I've made this many times and it truly is the best. My family does not like walnuts, so I omit them, but otherwise, I follow the recipe exactly!

I made this for a guest coming for Sunday dinner. I usually like to try out new recipes on family first, but for this one, I sent up a quick prayer that it would be ok! It was fantastic! I followed the recipe exactly, but I did not add the optional sugar. It cooks beautifully on the grill and does not stick.

Corned Beef and Cabbage

I followed the recipe exactly, except I didn't have a bay leaf. I would have to say this is the best corned beef and cabbage I've ever had. It's also good with a spicy brown mustard. Mmmmmm.

Creamy Hot Cocoa

Tartar Sauce I

This is the best tartar sauce. I don't even think about buying tartar sauce at the store. I've used home made sweet pickles, chopped gherkins, and relish. The only thing I don't understand is the 3 day storage. I have stored this for 1 month in the refrigerator and I'm still alive!

Banana Pudding IV

Be sure to blend the cream cheese with the sweetened condensed milk BEFORE adding the rest of the ingredients. Mine turned out lumpy, but still tastes really, really good.

Scalloped Potatoes and Onions

Made this the night before and put it in the oven in the morning on Easter Sunday. It was so delicious. I made them following the recipe exactly. Since I made a ham, it might be good to add a little ham to the leftovers.

Tres Leches (Milk Cake)

I made this cake for Easter and my choir members loved it. One suggestion I received was to add another teaspoon of vanilla flavoring to the 3 milks, blending the milk and then pouring it over the cake. Instead of whipped cream for the topping, I used Cool Whip.

Quick and Easy Alfredo Sauce

Chocolate Frosting II

The flavor is great! The only thing I would change is the process. I measured the powdered sugar and cocoa and sifted them together to avoid lumps. I then melted the butter, and when the butter was melted, I added the sugar and cocoa to the butter in the pan, keeping the heat to low. I added the vanilla and milk and blended it until smooth. I have another recipe that is similar and the frosting thickens as it cools. If it becomes grainy, I heat it a little more and keep stirring until it smoothes out. Then, I frosted the entire cake. It looks beautiful on the cake and tastes great!

Cheese Ball I

Delicious! I used lower fat Neufachtel type cream cheese and it still turned out great. According to the box, it has 1/2 the fat of regular cream cheese and tastes the same. Other than that, I followed the recipe exactly.

The Best Rolled Sugar Cookies

This recipe is aptly named. These are the best! I don't like to roll out cookies so I formed into 1-2 inch balls and rolled in red or green sugar. Then I flattened the cookies using the bottom of a glass. They turned out great - they looked like ornaments.

Restaurant-Style Zuppa Toscana

This soup is so good on a cold winter day. I used Hot Italian Sausage instead of the polish sausage and I liked that much better. I browned it in the pot and then continued with the rest of the recipe. It was even better the next day.

Pineapple Upside-Down Cake VII

I made this cake and took it to my husband's work. It was gone in less than 5 minutes. I did substitute the pineapple juice for the water, and added more water to equal the amount called for in the directions. One of my husband's co-workers said she hadn't had a Pineapple Upside Down cake for so long. Her Mom, who had died, made the best cake and this cake reminded her of the one her mother used to make. I will make this often.

Panettone II

This is really delicious. I did modify the recipe a little. I increased the amount of sugar to 1/4 cup and used 1 teaspoon of Fiori de Sicillia instead of the vanilla. I like lots of fruit and it seemed a bit shy of the amount of fruit I like so I'll increase the fruit to 3/4 cup next time I make it. It makes a very tender loaf and I will give this as a gift to some of my friends.
