Red Velvet Cupcakes

This recipe was OK, but not what I expected red velvet to be. I wanted something to rival the cupcakes I buy at the bakery, and these weren't even close. The cream cheese icing tasted good but it wouldn't hold it's shape once I piped it onto the cupcake.

A little sweet for me. Next time I will try it using less sugar and 18% cream instead of 36%. I added an entire pureed pineapple and it was amazing. I want to try it with other fruits as well.

Mexican-Style Goulash

Added 1/2 cup chopped celery, 1/2 cup tomato sauce, used rigatoni instead of macaroni, and mozzarella cheese instead of cheddar (Hey! You work with what you have!) Very hearty meal :)

Quick and Easy Sicilian Meatloaf

Hubby LOVED it! He ate 3/4 of the loaf himself at dinner. Personally, I thought it was a tad salty, so next time I am only going to use half the pouch of onion soup mix, but everything else was great!

OMG Amazing!! I left out the pecans as I dont care for them, and used a Tbsp of orange juice instead of orange extract, but made the rest as the recipe states. Is it bad that I ate half the pan myself? :D

Made a huge rectangle pizza with an oversized cookie sheet. Baked dough for 8 minutes before putting the toppings on to crisp up the crust a little.

Apple Crisp II

I made about 1 1/2 times the crust, not quite double, and I did reduce the water to 1/4cup. I also added 1/8 tsp of ground cloves, and 1/8 tsp ground nutmeg. It was perfect!
