Chicken Breasts Pierre

Served with a garden salad and "Coconut Rice with Black Beans" (recipe from this site), and all was amazing. I only used 3 chicken breasts cut up, to allow for extra sauce to go over the rice.

Chicken, Stuffing and Green Bean Casserole

Delicious and satisfying served with a garden salad. This is definitly a keeper. However, I did add more seasoning to adjust to my family's taste. I added garlic salt and paprika to the chicken breasts before sauteing in olive oil, added sauted fresh mushrooms, and used chicken flavored stuffing.

Watermelon Lemonade

Spaghetti Salad III

This salad is always a hit! I substitute Salad Supreme for the italian seasoning, and add sliced olives. Cherry tomatoes are always a nice touch too.

Red River Beef Stroganoff

Brown Sugar Smokies

Always a favorite. I get requests for these all the time. A trick I use to cook the bacon a little more and not burn the sugar; is to transfer the lil smokies to a new foil lined baking sheet once the brown sugar starts to burn. This also allows the bacon to crisp up some.

Tater Tot Taco Salad

So easy to prepare, this recipe’s a keeper. The tater tots provide a perfect base for the taco toppings, with the flavors complimenting each other. I used ground elk instead of beef, which was a first for me to cook with. The hunters in the family insist I try it. The meat was cooked following the directions on the taco seasoning packet, and it came out delicious.

Slow Cooker Chicken Taco Soup

Everyone was excited to taste the soup after smelling it cook all-day in the crockpot, and it did not disappoint. It was delicious topped off with cheddar cheese, sour cream, and avacado. Followed the recipe exactly, and it had more of a thicker chili like consistency than soup, perfect for a chilly winter day.

Easy Key Lime Pie I

Chicken in a Pot

Delicious and easy to prepare! I used two chicken breasts keeping the ratio of the remaining ingredients the same, since most reviews suggested more sauce to chicken. I also cut the chicken breasts into bite sized pieces before breading and sautéing, to allow the sauce’s flavor to enhance more of the chicken. All served over rice that was made with the left over canned chicken broth. Yummy! Next time I’m going to try it without adding the 1/8 teaspoon of salt, given that the broth already had plenty of salt.
