About this Cook
Lovingly married to my best friend for 22 years. Raising our two daughters, one who is mentally and physically disabled and one who became a teen mom very young. She is raising her now two year old son with a maturity that makes us proud...he is our pride and joy and and is very excited that his daddy has recently come to live with us too!!
My favorite things to cook
I love baking most of all but love experimenting with different cuisines though it can be a challenge... my kids are very picky and don't like to try anything new!
My favorite family cooking traditions
Big family meals for Thanksgiving, Easter and Christmas...the menu keeps growing every year because we like to try new recipes and when we find one that we love it has to be included in the next family function!!
My cooking triumphs
I can't think of anything in particular that stands out...I have been cooking since I was 8 and take after my mom...most everything I make turns out good! I inherited the ability to know what flavors blend well together and truthfully, some of my best dishes will never be recreated because I can't remember exactly how much of what I had put into it, lol. I do love to bake and especially to decorate cakes, making my sister's wedding cake was a big honor for me.
My cooking tragedies
Only two come to mind but those were goodies!! 1)first time ever making homemade bread...had watched a good friend of mine make it..a good Ukrainian girl who just threw in 'about this much water' and 'this much sugar should be good' and 'approximately this much flour'....looked easy, few days later decided to make myself some bread.. threw in approximate amounts of the appropriate ingredients...ended up with rectangular hockey pucks..don't know what went wrong..didn't rise at all, worse yet, my good Ukrainian friend dropped by just as I was taking them out of the pans..we laughed as we kicked one around the kitchen floor!! 2) was mixing up meatloaf and realized I didn't have any bread crumbs or oatmeal..so quickly broke up some pretzel sticks into it, thinking, it's bread right??..NOPE. They absorbed all the oil, swelled up and lost their nice golden color...cut into the meatloaf and it looked like swollen, greasy, grey earthworms throughout!! Kids still bug me about my wormy meatloaf!

Shrimp and Gravy
For those worried about fat or calories this recipe is super easy to lighten up...I substituted 4 TBSP(1/4 c) Kirkland real bacon bits for the bacon and used a whole can of evaporated skim milk...otherwise made the the recipe as written (oops, also added a can of mushrooms)and it was delish! Even my picky, shrimp leary children loved it! Wrote it in my recipe calculator and it was really low in fat, cals and high in protein...win-win. Give it a try, you won't be sorry.

Mall Pretzels
Seeing as I have never made pretzels before I wasn't sure if I could modify them to make them lower fat, lower cal and still have them turn out but tried it anyway...and they were wonderful!! Made the recipe as is with the following substitutions... 1 TBSP Splenda brown sugar blend instead of 2 TBSP regular brown sugar, 2 tsp quick rise yeast instead of the active dry yeast and Becel 64% less fat in place of the butter! I made mine into 16 pretzels and ended up with the following nutritional info...114 cals, 23 g carbs, 1 g fat, and 3 g protein...and sooo worth every bite! My family is insisting I make more tomorrow!

White Chocolate Raspberry Cheesecake
PHENOMENAL!! Needed a cheesecake for a family BBQ/Birthday supper and decided to try this one as it came up the top rated cheesecake... absolutely lives up to the hype! I changed the crust as didn't have oreo/chocolate crumbs...used graham wafer crumbs with 3/4 c of crushed almonds in it...the almonds with the white chocolate and raspberries...YUMMY! The cheesecake cracked a bit more then I am used to (seems to crack along the swirl lines) but it still presented beautifully with the sauce drizzled over it. My family is insisting I make this again soon!!
