Nutty Goat Cheese Bites

Reviewed: Oct. 11, 2008
I loved these, especially while I was making them for my family's holiday gathering. Unfortunately, they taste better right after the bread is toasted. My family was hesitant to try them and I had a lot left over.

Lemon Pepper Shrimp with Mustard

Reviewed: Oct. 11, 2008
This turned out much better than I expected. I used Jack Daniel's Horseradish mustard and Sauvignon Blanc wine and the dish had such a lovely wine and spice kick that I wish I had had some crusty French bread or rice for the remaining sauce. Incredible!

Family Casserole

Reviewed: Oct. 11, 2008
My boyfriend and I really liked this recipe. I took into consideration all the reviewers' suggestions and it came out wonderfully. I added an extra cup of cubed chicken and an extra cup of rice. I used about 2 cups of fresh steamed broccoli and 1 cup of fresh sliced mushrooms. I used one can of cream of mushroom soup and one can of cream of chicken soup. I left out the water chestnuts and the celery because they just don't do it for me in a casserole. I sauteed the onion and mushrooms then added all the other ingredients, adding shredded Colby cheese only after it was in the baking dish and ready to be baked. Again, I'm very pleased with how this turned out. My only wish is that I had something crunchy to top it off at the end. Maybe French fried onions?

Tasty Texas Tenders

Reviewed: Jan. 7, 2007
I tried this with ground up Special K cereal (which is basicly rice cereal in flake form) and it was ok, but not what I expected. There is a tinge of sweetness that didn't go very well with the chicken strips and other spices. It just didn't do it for me.

Creamy Cajun Shrimp Pasta

Reviewed: Jan. 7, 2007
Oh man, this was incredible! I used a bit more butter and only used 1 tablespoon of Cajun Seasoning and it turned out scrumptious! I love creamy and spicy sauces so this was perfect!

Garlic and Tomato Tilapia

Reviewed: Jan. 7, 2007
Not bad at all. I'm always looking for new and exciting ways to prepare tilapia. I used low-fat plain yogurt instead of sour cream and it turned out great!

Garlic Red Potatoes

Reviewed: Jan. 7, 2007
This is a fantastic recipe that is versatile and delicious. I make it for breakfast with eggs and bacon or dinner with pork loin and vegetables. I make it a bit healthier by only using a dab of butter and a tablespoon or so of olive oil instead. The other reviewers are correct in that it takes at least 45 minutes to cook all the way through. Enjoy this one!

Herbed Chicken Strips

Reviewed: Jan. 7, 2007
This has become a staple in my weekly menu for dinner. I add a little more dill and it screams Mediterranean! So I make it with Basmati rice and have a cucumber and tomato salad on the side and everyone loves it. Thanks so much for this simple, wonderful recipe.

Andouille and Chicken Creole Pasta

Reviewed: Dec. 11, 2005
My boyfriend complimented me to death about this dish and it was a last minute decision for me! We wanted to spice up some chicken tenders, so I just used chicken cut into strips without the sausage. I also didn't have mushrooms, but added about half a can of cream of mushroom soup since some had mentioned that the sauce needed more thickening. I ended up adding more water and cornstarch because it got a little salty (but my boyfriend LOVES salt!) Other than that we have a ton left over to pour over rice or pasta for tomorrow!

Creole Seasoning Blend

Reviewed: Dec. 11, 2005
I love this stuff! I didn't have cayenne on hand so I used Mexican chili powder and it seems to do the same trick! Yum!

Broiled Tilapia Parmesan

Reviewed: Dec. 11, 2005
I hate cooking fish because I always tend to overcook it. But this was a snap and perfect in the broiler. My boyfriend and I loved this and it was so quick and easy to make! I didn't have parmesean on hand so I used some shredded romano cheese and it was divine! I look forward to making this again.

Slow Cooker Casserole

Reviewed: Dec. 11, 2005
I always have a bunch of chicken and ramen noodles around and this is great in the slow cooker to have waiting for you when you get home. Can get a little salty.

Caramelized Baked Chicken

Reviewed: Dec. 11, 2005
This is always an easy thing to do with chicken breasts or tenders. Sometimes the sauce isn't to carmelly, but it still has that sweet taste and if served over rice, it makes a nice sauce.
