Best Lemonade Ever

YUM! This was so good! And it did not take 4 hours to make, even though I squeezed all the lemons by hand since I didn't have a juicer. The trick is to soak the lemons in hot water for 10 mins and roll each lemon on the counter before you cut and squeeze. I only used 1 1/4 C of sugar and added a little more water. Very good recipe! Jean's Homemade Chicken Noodle Soup

I am the author of this recipe. Just wanted to share with you my tweaked version. *Two 32 fl oz (2 quarts) of Organic chicken broth A bag of mini carrots - I leave them as is 1 large potato - chopped 3 stalks of celery - chopped 8 frozen chicken tenderloins (I like Tyson), cubed 1 Tbs extra virgin olive oil fresh ginger, garlic or scallion Mrs. Reame's frozen pre-cooked egg noodles or dumplings salt pepper Dutch oven* In dutch oven, add broth and let it come to a boil. Add veggies and pepper. In a separate skillet, add oil, ginger (or garlic or scallions), and salt to sautee. When chicken is cooked, add to the broth. Let broth come to a boil and add noodles. The longer it cooks, the better it tastes!

Tasty Tuna Burgers

These burgers were pretty good. My family really enjoyed them. I omitted the red bell peppers and celery because I didn't have any, but still tasted fine. Oh, I didn't really care for the dill weed so next time I make these I will not use it.

Tofu Lasagna

I love tofu, and I love lasagna ... I never thought this would taste soooo GOOD. I made some modifications to it based on other users reviews. First I sprayed my pan with PAM. In a large mixing bowl, I added a block of firm tofu (dried off w/ paper towel), 2 eggs, a couple gulgs of organic milk, kosher salt, italian seasoning, garlic powder, basil, nutmeg, blk pepper, mozz cheese, 3 cloves of fresh garlic chopped, and 1/2 a jar of Bertolli olive oil and mushroom sauce. I smashed it all together for the ricotta consistency and then put this tofu mixture as my bottom layer. I had 3 layers of noodles. On my 1st layer, I put some sauce from the jar and some cheese; then the tofu mixture, then sauce/cheese. I never measure my spices. Just pour in a whole bunch cuz it tastes so good (or eyeball it, as Rachel Ray would say)! Next time I may add some Boca ground meat sauteed in EVOO and garlic and add it as one of my layers. Spinach sounds good too. I bet my tofu-phobic husband will never know this lasagna was made with tofu! Thanks for the great recipe! *UPDATE*: I successfully tricked my husband. He LOVED the lasagna so I do not think I will ruin it for him by telling him about the tofu. One thing I would probably try differently next time is to use plain sauce (not the tofu/sauce mixture) for the bottom layer.

Chicken Curry I

This does not taste like Indian curry at all but it is still delicious. I've omitted the tomato paste and lemon, and added 2 potatoes and some carrots. I use a few extra garlic cloves, and lot more salt as well (a pinch is not enough). I also use boneless chicken tenders. I suggest simmering this for an hour or so.

Shepherd's Pie III

I loved the idea of this recipe, but made my own by altering a few things. I had leftover potatoes and carrots soaking in beef broth from the hideous diasater of a roast I made last week. The beef was too tough, so I gave it to the dogs and saved the rest. I took the potatoes and mashed them for the topping. The carrots were diced and used in the meat mixture. I use 1/3 lb of 95% lean beef, 1/3 lb italian pork sausage, and 1/2 lb of ground turkey. I added garlic salt/pepper, black pepper, more garlic powder, worchester sauce, a small white onion, and some frozen peas. Heat that on the skillet (no oil b/c the beef and pork gives plenty of it). I put it in a 375 preheated oven for 25 mins. It was FABULOUS!

Peter's Pasta al' Tonno

I haven't tried Peter's recipe, but I make a great tuna pasta which is pretty similar. First, I would not use spaghetti, fettucine, or linguini. Try to stick with penne or rotini. Do not overcook the pasta! Second, while the pasta is cooking prepare 2 cans (6 oz each) of drained albacore tuna (flaked) in a large bowl. Use the tuna can to measure the olive oil. I usually fill it up half way. Add olive oil to tuna, then salt and pepper to taste. Mince 4 cloves of garlic in bowl and stir. When the pasta is done, drain and run under cold water. Then add pasta to tuna mixture. Add more salt and pepper. And 2 more cloves of garlic. You can eat this cold, or nuke it in the microwave for 2 minutes.

Irish Chicken and Dumplings

This is definitely a fabulous comfort food! My fiance loved this. Make it only when you have a lot of time on your hands. The longer you cook this, the better it tastes. I made some modifications to this recipe. I used a "can" more water than the recipe called for. I didn't have any poultry seasoning so I used garlic powder and Mrs. Dash. I also added tons of salt and pepper gradually. My fiance LOVES chicken so used a bunch of those frozen boneless chicken tenderloins from the wholesale club (Tyson). I did cut it in chunks like the other reviewers suggested. I am not sure how much I used. With the tenderloins you only have to do step 1 for 30 mins instead of the 1 hr 1/2. Along with the frozen peas, I added other mixed veggies (carrots, corn, green beans mixture). Lastly, for the dumplings ... I used the dumplings recipe on the Bisquick box. It's 2 cups of Bisquick and 2/3 cups of milk. Yum Yum!

Chicken Fried Steak Cuban Style

So delicious and easy. Tasted great the next day too! I fried my steak in olive oil with fresh garlic. I also added some garlic powder and Mrs. Dash to my bread crumbs. Yumskers!

Breaded Pork Tenderloin

Pretty good overall except that breading is a little soggy. The first time I made it I slightly covered it w/ foil. The second time I made it I didn't cover it at all, but it still came out a little soggy. Next time I won't line the pan with foil to see what happens. Also, I would suggest more salt, and some garlic cloves for better flavor.

Banana Banana Bread

I don't like bananas at all, but I used this recipe to make banana bread for my fiance. He loved it and said it was the best BB he has ever tasted. I have to admit, it did smell realllllllly good when I took it out of the oven. I know I would probably enjoy this if I liked bananas.

Garlic Green Beans

This recipe was pretty good :). I would use fresh green beans and leave out the butter next time. I ALWAYS cook with garlic and olive oil so this recipe wasn't too exciting to me. Everyone should try it though.

Pumpkin Cheesecake I

Snickerdoodle Cake I

Thanks for the great recipe. I added a tsp of vanilla extract as others suggested. I also used organic eggs and milk. This tasted like delicious pound cake. Would be pretty tasty with fresh strawberries and whipped cream!

Italian Spaghetti Sauce with Meatballs

I took the idea of this recipe and tweaked it to my liking. I used 1 lb of 95% ground beef, 1/2 lb of italian pork sausage, 3 eggs, 3/4 C plain bread crumbs, 6 cloves of garlic finely chopped, a TON of italian seasoning and garlic powder, salt&pepper for the meatballs. For sauce, I used 2 cans of diced tomatoes and 2 cans of tomato paste (along with 2 tomato-paste-cans of water). I sauteed the meatballs in a deep skillet w/ extra virgin olive oil. Then added more garlic and onions. Then diced tomatoes/paste. I seasoned w/ more italian seasoning, dried basil, garlic powder, little bit of sugar, salt&pepper. If you don't like chunky sauce, use crushed tomatoes instead. I let it simmer for about 2.5 hours. It was a huge hit with everyone!

Black Bean and Corn Salad II

This is so yummy. Omitted avocado and tomatoes because I didn't have any (will use next time since I love both). Used a whole package of frozen corn, 1 can of black beans, 1/2 a bunch of cilantro, juice of 2 limes, 1 green pepper chopped in tiny pieces, scallions, a bit of olive oil, salt, pepper, lots of garlic powder, lots of minced garlic, cayenne pepper. Next time I may add red and yellow peppers, and a small red onion in place of scallions. I like to change my recipes around.
