This was a good basic recipe. I did not use leek as the grocery store didn't have any. I also used dried thyme. Otherwise I followed the recipe.

White Ranch Macaroni

This recipe was DELICIOUS!! My husband, kids and I all loved it. I couldn't find Garlic Ranch so I just used the regular and it was the best mac & cheese I have ever had. Yum!

Quick and Easy Alfredo Sauce

Yum! I used ground cinnamon and I sauteed mushrooms with the 1 large onion I used in butter. Also, I substituted diced tomatoes for the garbanzo bean water. I used much less cayenne than called for so my kiddos could eat it. YUM! Loved this recipe.

Baked Shells in Sauce

I enjoyed this recipe. It was quick, easy and good. I used a bit more tofu and cheese than called for. Next time I will chop the mushrooms even smaller so my son can't see them and complain about them. :)

Cheese Enchiladas

I made this exactly as written and it was just okay. If you are going to make it than I highly recommend cooking the onions and using (and cooking) fresh mushrooms. If you like them extra cheesy you should add extra cheese as well. I was okay with the amount of cheese to save on the fat.

Potato and Bean Enchiladas

YUM! I am a vegetarian and really have enjoyed these enchiladas. Even as leftovers they are fantastic. I did make some changes- I realized I was out of cumin while preparing these so I used taco seasoning and chili powder on the potatoes. I used canned tomatillos and dried onion flakes in the blender as the sauce and didn't like the taste so I added my favorite salsa. I messed up on filling and put all the cheese in the enchiladas and none on top. I will make this recipe again and again. Thanks!

Insanely Easy Vegetarian Chili

Very good and is even better as leftovers. I served it with corn bread. MMmmmm... I also wouldn't call it insanely easy as it was quite a bit of chopping involved.

Slow Cooker Stuffing

This was my favorite of the recipes I made for my Christmas dinner this year. I loved the mushrooms in the crock pot and it was neccessary that I save the room in my oven. I will make this again for sure!! I used fresh bread and about 1/2 the stock called for.

Garlic Mashed Red Potatoes

These are good. My guests and I agreed that we prefer the taste and texture of russet potatoes for mashing though. I love the idea of boiling the garlic in with the potatoes.

Spinach Enchiladas Verde

These were good but a bit to spicy for me and my family. I messed up a bit and forgot to add the extra sour cream into the tortillas so I just spread it on the top. Also, I used 12 tortillas and 1/2 the amount of green salsa. If I did it again I would buy a jar of mild or medium salsa vs. the can.

Just okay. It smelled really good cooking but it was a bit peppery for me and it didn't thicken up as much as I would have liked. I added more cornstarch.

Di's Delicious Deluxe Deviled Eggs

These are good. I like the hot sauce in them and put way more than called for. I think that was my husbands favorite part as well. I am a purist also though and did not prefer the texture of the crunch in my deviled eggs... I kept thinking I was getting a bite of egg shell.
