Shrimp Pizza
Really enjoyed this recipe! The second time I made it, I only used about half as much of the cream cheese mix as the reipe called for, and added some shredded Monterey jack to the top before baking the whole thing for 15 min. The flavors come together perfectly, and the Italian herbs make the kitchen smell like heaven. This is a new addictive favorite!

Angela's Awesome Enchiladas
This is a truly awesome recipe, and the changes I made are mostly about personal taste. First, use more smaller tortillas and place them the other direction in the pan. Secondly, I added a 14.5 oz. can each of drained kernel corn and black beans to the chicken mixture to add a little counterpoint to the heavy creaminess of the soup/sour cream. Lastly, I made green enchilada sauce because I haven't found a good canned one. 1/2 C diced onion and 3 pressed garlic cloves sautéed in 2 T oil. Add 3T flour, 1 1/2 C chicken broth, 2 4 0z. cans diced green chiles, 1 seeded and minced jalapeno, 1/4 t each of cumin and oregano, salt and pepper to taste. Simmer 1 hour.

Clark's Quiche
OMG this is good! Even better nuked the next day, if possible. I went with a 1# all-bacon version (thank goodness, 'cause I wouldn't have had room for 2 C of ham), and I'm SO glad I read the reviews and used DEEP DISH crusts. Also made sure to egg-white-wash the crusts and pre-bake a little so they didn't get soggy. YUM!!!
