About this Cook
I grew up watching my mom in the kitchen and then trying to imitate what I had seen when I got to college. I really enjoy trying new recipes and using new and odd ingredients. Healthy cooking is usually my goal, and I also enjoy health food fads (even though I usually don't believe in them) as it forces me to try new things.
My favorite things to cook
My favorite thing to make is pizza dough. Each time I make it, it's a little bit different, which is very frustrating. I want to be able to make it every time with the consistency my mom makes it.
My favorite family cooking traditions
My favorite cooking tradition (which sadly we don't do anymore) was coming up with new recipes for my parents restaurant with my mom. Since I moved away, I don't get the opportunity to do it anymore but it was always fun making up recipes that start with 8 eggs or 12 cups of sugar. I grew up thinking 25lbs of flour was the "small" bag.
My cooking triumphs
My most rewarding moment was when I made home made chicken soup from ABSOLUTE scratch! I even de-boned the cooked chicken. (I was a vegetarian for most of my childhood due to the fact that meat disgusted me so this was a big moment for me).
My cooking tragedies
My biggest cooking tragedy was making a 'stew' with my bestfriend/brother's girlfriend my freshman year in college. We were making my brother dinner and it went so so wrong. It didn't thicken and so we added corn starch to the hot water (which is a no no) and it just clumped up and formed weird flourery balls amidst a water and slimy 'stew.' It reminded me of the stew Bridget makes in Bridget Jone's Diary, but at least it wasn't blue... Also another thickening issue occred while making strawberry pie with a roommate last year... it looked more like stew... haha

Cheddar-Topped Veggie Beef Skillet Dinner
I pretty much made this tonight, without having seen this recipe. Being a casserole, you can change things as you see fit. I used cumin instead of oregano/basil, canned diced tomatoes, canned tomato sauce, no zucchini nor beans, and folded in spinach at the very end. I was awesome! I also used some of it to stuff those mini bell peppers (see photos). They were delicious!
